By Land, By Sea — New Menus at the Bird’s Nest

Beginning October 15, 2023, the Bird’s Nest is featuring four new set menus, each reflective of local produce and culinary traditions, with every dish carefully refined by Chef Tum into intricate recipes and presented in exquisite style.

“By Land” is the theme of the “Tantalizing Turf” four-course menu, a veritable feast of flavours, starting with an appetiser choice of either Spicy Lemongrass Salad with Tiger Prawn Mousse or Banana Flower Steamed Bun with Grilled Chicken & Fried Local Vegetables. The second course is a spicy Thai soup (southern Thai cuisine is often said to be the spiciest in Thailand) with sea bass. The main course is a mouthwatering Sous Vide Lamb with A-Jad Pineapple, and a dessert and sorbet will round off a delicious dining sensation.

Chef Tum likes to call the “By Sea” menu his “Symphony of the Sea”, and you can hear echoes of his time at Bangkok’s reputed Sukhothai Hotel, where he trained with several Michelin-star chefs, in his latest creation, the Baked Lobster with Panang Curry Fruit Sauce, an aromatic but delicately light entrée.

The third Bird’s Nest menu is the vegetarian “Garden Delights”, starting with Dumplings Stuffed with Grains and Mango Passion Fruit Sauce. Perhaps emblematic of the Banyan Tree Group’s reputation for and commitment to sustainability and environmental awareness, is the menu’s main course, Grilled Soybean Tofu, Sweet Peas with Green Curry Sauce, which is created from organic ingredients purchased from the local Krabi area.

Bird’s Nest guests’ have a fourth set menu to choose from — titled “A Touch of Opulence”. Like the other menus, it offers a choice of appetizer and a spicy soup, but as a main, Chef Tum has called on a favourite Chiang Mai dish, the ever-popular coconut milk-based curry khao soi. Chef’s original Beef Khao Soi and Lap Pu Croquettes with Plant-Based Sausages is as lip-smacking as it sounds.

Afternoon Tea?

Evening dining at the three Bird’s Nest tables is from 6pm to 11pm daily, and guests are advised to book as far in advance as possible due to popularity. As an outdoor venue, shaded by trees and aided by a sea breeze, attire is smart-casual.

However, for those who miss out on a dinner dining experience, an alternative exists that is equally as photogenic: afternoon tea. Bird’s Nest table reservations can be made for either 2pm – 3:30 pm or 3:30 pm – 5pm. Ideal for special occasions such as anniversaries or birthdays, an afternoon tea invite at the Bird’s Nest is truly a treat waiting to happen: from a Thai Set with crunchy coconut in betel leaves to a Champagne Set to the timeless Traditional English Afternoon Tea with Earl Grey and scones, smoked salmon sandwiches, chocolate truffles and blueberry cheesecake, this is a surely an enviable moment to be captured and posted to friends and family at home.

The Resort

The initiative is part of the Banyan Tree Group’s “Stay for Good” programme, launched two months ago, aimed at enticing guests at 5-star hotels worldwide to roll up their sleeves and join neighbouring villagers at work.

At the Balinese property of Buahan, A Banyan Tree Escape, for example, guests spend a day with local farmers, foraging for fruits and edible plants, while at Garrya Nijo Castle Kyoto in Japan, visitors learn how to entwine grass to make traditional thatched roofs for villagers’ homes.

“At Banyan Tree Krabi, we invite our guests to embark on a day’s adventure at the quiet fishing town of Ban Koh Klang on a small island in the middle of the Krabi River,” said Sustainability Manager Ms Thepsuda Loyjiw. “It’s a great opportunity to travel by traditional longtail boat along the river where they might spot some rare bird species and wild monkeys among the mangroves. The island itself is a spectacular natural setting and among the hidden gems we visit is a series of majestic limestone caves.”

A lunch, inspired by home-grown fruits, vegetables and recipes passed down from one generation to the next, is served on a floating restaurant among the mangroves, then the guests meet the villagers and interact.

Among the daily pursuits the foreign visitors can experience are: joining the local craftsmen who intricately carve and create wooden models of longtail boats, which are sold in Krabi as souvenirs; and sitting with the women of Ban Koh Klang who are veterans of batik art, mixing organic dyes and skillfully painting colourful fabrics. Harvesting rice in the fields with a local family is included as a seasonal activity.

Launching the programme in May, Banyan Tree said it hopes the visits will “encourage a deeper connection with each destination while honouring the heritage and traditions and contribute to creating more opportunities for local communities.”

Constantly vying to reduce the hotel’s carbon footprint, in December Banyan Tree Krabi partnered with a local artisan, Souvenirs From the Sea, a project involving beachcombing for refuse and waste products that could be upcycled into sellable items such as tote bags.

Banyan Tree Krabi’s other recent sustainability initiatives include an Earth Day beach clean-up, and the introduction of Forest Bathing, a nature-based educational tour for guests, including children, to help raise awareness about environmental conservation and protecting local flora and fauna.

“Of course, many guests come to a serene destination to relax, to enjoy cocktails at sunset, spa treatments, and wining and dining,” said Loyjiw. “However, they also want to see the local customs, and nothing feels better than giving something back to the community.”

Banyan Tree Krabi Appoints New General Manager - TRAVELINDEXKrabi, Thailand, January 30, 2022 / TRAVELINDEX / Banyan Tree Hotels and Resorts has announced that Mr Nigel Fisher, an Australian national with 37 years’ experience in luxury hotel management across Asia and Australia, has been appointed General Manager of its beachfront resort in Krabi, which opened in October 2020.

After graduating from Switzerland’s prestigious École hôtelière de Lausanne in 1985, Fisher returned to Australia to join Hyatt International Hotels, where he would spend the next 15 years. In the 2000s, he was Resident Manager at the Four Seasons Sydney and at the Great Barrier Reef’s Hayman Island.

He took on the role of General Manager at leading hotels in Malaysia and the Philippines before moving to Banyan Tree in 2015. From his first post at Banyan Tree Huangshan in China, he stepped up as Area GM for Lijiang and Ringha. Fisher oversaw the opening of the Angsana Penang, before being lured across the border to southern Thailand.

“Nigel is a seasoned professional with a passion for Asian culture and a strong command of Asian values,” said Remko Kroesen, the Area General Manager for Banyan Tree Samui and Banyan Tree Krabi. “He brings a wealth of experience from some of the world’s top hotels — knowledge which will be instrumental in establishing Banyan Tree Krabi as a leading resort in the region.”

The “Wellbeing Sanctuary” initiative was launched on October 1st at both resorts, and provides guests with an opportunity to combine a leisure vacation with a daily program designed to enrich mind, body and soul — from meditation to Thai boxing, from massage and hydrotherapy to nature trails and sailing lessons —  complemented with a nutritious diet and personal consultations.

“When guests book a Wellbeing Sanctuary, they have the flexibility to choose their own activities,” said Remko Kroesen, Area General Manager overseeing both hotels. “Before arrival, we send them a questionnaire so they can stipulate their goals, and our practitioners will be on hand throughout their stay to ensure they have every opportunity to connect with nature, discover a sense of deep relaxation, and find balance.

Thailand Mid-August Launch Planned for Krabi and Phang Nga

Krabi, Thailand, Augsut 7, 2021 / TRAVELINDEX / The Tourism Authority of Thailand (TAT) would like to reiterate that both the Phuket Sandbox and Samui Plus programmes are going ahead as usual, and the plans to reopen Krabi and Phang Nga to fully vaccinated international tourists are set to start within August.

Mr. Thanakorn Wangboonkongchana, Spokesperson of the Centre for Economic Situation Administration (CESA), said the Thai Prime Minister General Prayut Chan-o-cha had been keeping a close watch on the Phuket Sandbox and Samui Plus programmes, and voiced confidence in the plans to revive the economy through tourism by gradually reopening destinations that could ensure the health and safety of both the tourists and local people.

The new COVID-19 cases in Phuket were cited as mostly detected among locals, construction camp workers and domestic travellers with only a small number of cases found among international arrivals.

From 1 July until 1 August, 2021, Phuket recorded 14,910 international arrivals under the Sandbox programme. Of these, 34 tested positive for COVID-19 and had been sent for medical treatment.

To contain local transmission, Phuket has stepped up screening measures on domestic travellers, effective from 3-16 August, 2021. The measures are only meant to prevent the spread of the disease from other Thai provinces, while international arrivals under the Sandbox programme can still enter Phuket per the existing rules and regulations.

Meanwhile, the recent report of 54 new cases on Ko Samui from a restaurant cluster has been brought under control, and that none of the infections were related to foreign tourists under the Samui Plus programme or those who continued their journey from the Phuket Sandbox programme.

From 15 July to 1 August, Surat Thani recorded 137 international arrivals under the Samui Plus programme, with 1 person testing positive for COVID-19. In addition, there were 211 tourists from the Phuket Sandbox programme.

Surat Thani also stepped up COVID-19 control measures, effective from the last week of July until further notice, to safeguard the ‘Samui Plus’ model.

Krabi and Phang Nga are scheduled to reopen selected areas within this month under a 7+7 model. This will allow foreign tourists under the Sandbox programme to reduce the mandatory stay in Phuket from 14 to 7 days, after which another 7 nights can be spent in Krabi (Ko Phi Phi, Ko Ngai, and Railay Beach), and Phang Nga (Khao Lak and Ko Yao).

The 7+7 model aims to provide international tourists with more options to visit multiple destinations during their trip to Thailand. Krabi and Phang Nga are ideal for this given their proximity to and ease of access from Phuket.

For Phang Nga, Khao Lak can be reached within 1.5 hours by car, while Ko Yao Noi and Ko Yao Yai can be reached within 30-40 minutes by boat from Bang Rong Pier.

For Krabi, Ko Phi Phi, Ko Ngai and Railay Beach can be reached within 45-55 minutes from Rassada Pier.

Phuket, Krabi, and Phang Nga are declared among the 11 Controlled Areas or orange zone provinces in Thailand’s expansion of the COVID-19 restrictions from 3-31 August, 2021.
