Thomas is no stranger to Bangkok, as he previously served as Restaurant Manager at renowned D’Sens Frenh Restaurant at Dusit Thani Bangkok, Food & Beverage Manager at Plaza Athenee Hotel A Royal Meridien Bangkok and General Manager at Vogue Lounge Bangkok from 2014 – 2018. Afterwards, he has relocated back in France and took over the position of Food & Beverage Director at La Grande Maison de Barnard Magrez and Chateau de la Gaude in respectively.

With over 20 years of experience in this particular field and with the aiming to increase awareness of the hotel’s culinary offerings, we look forward to seeing Thomas apply his experience and grow The Sukhothai Bangkok’s Food and Beverage broadly locally and internationally.

Thomas will manage the hotel’s top-tier restaurants. Celadon is our famous traditional Thai restaurant that serves authentic dishes in an enchanting setting with a view of our famous Lotus Pond. From Thursday 6th to Sunday 9th July, three gifted chefs will collaborate for a special six-hand dinner that promises to lead you on a journey of gastronomic discovery. Renowned Peruvian chefs, Jorge Muñoz and Francesca Ferreyros, together with our own Chef Shunsuke from Japan will present a sensational 10-course tasting menu in the intimate and stylish setting of Restaurant Resonance.

Drawing inspiration from the country’s long and rich culinary traditions, the cuisine of Peru has been reimagined by young, bold, and creative chefs and is currently hailed as one of the world’s most exciting food trends. One such chef is Jorge Muñoz. While at Patka restaurant in Barcelona, Chef Jorge worked alongside Chef Kioko Ii from Japan to create a tasting menu inspired by Nikkei cuisine, a harmonious synthesis of two food cultures that grew out of Japanese immigration to Peru in the nineteenth century. In 2014, Patka was awarded a Michelin star, and received a “Best International Restaurant” award from Spain’s ABC newspaper. From 2019-2022, he was Executive Chef at Astrid y Gastón, the restaurant credited with starting the modern Peruvian food movement. It also ranked No.1 in Latin America’s inaugural ‘50 Best Restaurants’ list and was a recipient of the prestigious ‘Art of Hospitality Award’. Following his return to Peru, Chef Jorge is now focused on a new venture in the capital city, Lima.

Joining Chef Jorge will be Chef Francesca Ferreyros, owner-chef of the renowned restaurant, Baan in Peru. In 2015, she moved to Spain to join the team at the three Michelin star, El Celler de Can Roca which is described by the esteemed guide as an ‘exceptionally high-calibre restaurant’. She then spent several years in Bangkok working at the internationally acclaimed two-Michelin-star restaurant, Gaggan. During her time in the city, her approach to cooking was strongly influenced by Thai cuisine. Upon returning to Peru, she led the team at the legendary Peruvian restaurant, IK. Today, Chef Francesca is considered one of the most important young talents on modern Peruvian food scene. At her restaurant Baan, she skillfully combines elements of Thai cuisine with the indigenous ingredients and cooking techniques of Peru and the Amazon.

Our own Chef Shunsuke has also absorbed international influences cooking in Michelin-starred restaurants in Copenhagen and Tokyo. Here at Restaurant Resonance, Chef Shunsuke delights diners with his “Boundless Cuisine” concept – a changing menu of beautifully executed contemporary dishes that reflect his global experience, love of seasonality, and purity of flavour.

The collaboration between the two gifted Peruvian chefs and Chef Shunsuke is a recipe for a memorable evening of fine dining. At Restaurant Resonance, the 10-course tasting menu will delight and surprise diners with inventive dishes. Chef Jorge’s dishes will be created on the day of the dinner in response to his visit to the local market. Highlights from Chef Franscesca will include a Thai crispy flower with yellow curry manjar blanco and coconut ice cream, while Chef Shunsuke will serve a buckwheat crepe with anago fritto, grilled eggplant and summer pickled vegetables.

Born in Nagasaki, Japan, guest chef Ryohei’s impressive culinary pedigree includes working under Chef Seiji Yamamoto, founder of the three-starred Michelin restaurant, Nihonryori RyuGin. Chef Ryohei was later appointed Chef de Cuisine at Shoun RyuGin in Taiwan which was awarded two Michelin stars for three consecutive years and is the recipient of an ‘Asia’s 50 Best Restaurants’ award. Today, Chef Ryohei is regarded as a pioneer of the locally sourced food movement. Later this year, Chef Ryohei will showcase his unique style of contemporary Japanese cuisine at the new and eagerly anticipated, Eika restaurant in Taipei.

Thailand Promotes Gastronomy Tourism with Hidden Dishes - TRAVELINDEX - TOP25RESTAURANTS.comBangkok, Thailand, May 24, 2023 / TRAVELINDEX / The Tourism Authority of Thailand (TAT) is promoting ‘Thailand’s Hidden Dishes’ in the five regions of Thailand – Central, Eastern, Northern, Northeastern, Southern, and Regions – to leverage gastronomy tourism as a delightful way for Thai and foreign tourists to explore the diversity of Thai food.

TAT is hoping that “hidden dishes” from the country’s five regions will inspire tourists to embark on a culinary journey to explore Thailand and spark a new trend, gastronomy tourism in the Kingdom.

Mr. Chattan Kunjara Na Ayudhya, TAT Deputy Governor for Marketing Communications, said “The promotion of ‘Thailand’s Hidden Dishes’ forms part of the TAT’s ongoing strategy to elevate Thailand’s status as a world-class gastronomy tourism destination, and to increase awareness on the diversity of Thailand’s local food culture. Through this initiative, five lesser-known specialty foods have been identified to entice the palate and inspire tourists to explore new culinary experiences and engage in the local community in Thailand. This is also in line with our direction of Visit Thailand Year 2023: Amazing New Chapters that encourage travellers to find meaningful travel experiences in Thailand.

The five ‘Thailand’s Hidden Dishes’ represent some of the lesser-known specialty foods that normally are available only when travelling to the destination. Tourists will be inspired to combine the experience of local dishes with exploration of attractions and things to do in Phetchaburi, Trat, Chiang Rai, Khon Kaen, and Phatthalung.

Representing the Central Region is Phetchaburi’s Kaeng Hua Nod (also known as Kaeng Hua Tan) or Toddy Palm Curry. Phetchaburi, which has been honoured with the UNESCO Creative Cities Network (UCCN) title in the field of Gastronomy, is synonymous with several local specialty foods. The province is known to produce high-quality sea salt and key limes, palm sugar, rose apples, pineapples, and bananas among other items.

Trat in the Eastern Region is known for its marine aquaculture of Pla Yum Sawat (coral grouper, or coral trout), making it the economic fish of the province and a local specialty food. The fish is tasty and can be made into several delicious menus, including Tom Yum (spicy soup) and Sashimi.

In Northern Thailand, one of Chiang Rai’s local specialty foods is Moo Phat Raak Suu (stir-fried pork with the roots of hooker chives or garlic chives), representing an ethnic-Thai dish influenced by Yunnan cuisine. As well as stir frying with pork, the chives’ roots – known for its medicinal benefits and essential nutrients – are also key ingredients of several other local dishes.

In Northeastern Thailand (or Isan), Khon Kaen’s Au Pla (spicy and salty freshwater-fish curry) showcases the flavourful and distinctive Thai-Isan food culture. Isan has many rivers, where freshwater fish are in abundance, thus many local dishes use freshwater fish as key ingredients. Khon Kaen is among the four Isan provinces – others being Nakhon Ratchasima, Ubon Ratchathani, and Udon Thani – featured in the MICHELIN Guide Thailand 2023. Travelindex announced the imminent launch of it’s TOP25 Restaurants Thailand covering all Thai regions and cities and with a special section dedicated to “Thailand’s Hidden Dishes” from all provinces.

Phatthalung’s most popular local specialty foods include Kaeng Nam Khoei Yod Waai (coconut-based curry with shrimp or fish paste sauce and rattan shoots). Southern Thailand is known for using Nam Khoei (shrimp or fish paste sauce) as seasoning rather than Nam Pla (fish sauce). In Phatthalung, the use of Yod Waai or rattan shoots – known for its medicinal benefits and are abundance in the province, makes it a local specialty dish.

In April 2023, TAT has worked with popular travel pages on Facebook – Chinotoshare, Koendanai, Sneakout, Pai Ngai Ma Ngai, and Pai Ka Pai – to create awareness on the five Thailand’s Hidden Dishes among Thai tourists. The exposure achieved over 1 million reach and was expected to help distribute about 100 million Baht in food and tourism spending to the local economy. Activities in the pipeline include fam trips for international KOLs to boost awareness among foreign tourists.

“Through the promotion of the Thailand’s Hidden Dishes initiative, TAT also aims to encourage local restaurants and eateries to include local specialty foods in the menus to cater to growing demands from tourists in search of new culinary experiences,” Mr. Chattan concluded.

Exceptional Talent
Chef Ricardo Nunes – who previously worked at several Michelin-starred establishments including Potong, Belcanto and Gaggan – is a purveyor of locavorism, seasonality and curiosity. Resident Zymologist, Mateo Polanco, works closely with Chef Ricardo to further develop the intricacies of the fermentation techniques utilised across all dishes and beverages at hom. Chef Ricardo and Mateo have a strong belief in the pursuit of perpetual improvement; this innate curiosity and passion for discovery enables the presentation of endlessly innovative menus.

“The techniques used in the hom kitchen centre around flavour elevation; we will excite curious diners by presenting ingredients in new and inspiring ways, whilst maintaining a respect for the true nature of each ingredient,” said Chef Ricardo Nunes of hom.
The hom team is guided by Restaurant Manager, Peter Lucas. Peter boasts over a decade of experience working in Michelin starred establishments; most recently he was the Restaurant Manager of Baan Tepa in Bangkok and has also worked at the likes of Restaurant Savelberg in Thailand and Ciel Blue in The Netherlands.

Innovative Techniques
Chef Ricardo develops the hom menus by first identifying viable ingredients that grow or live on the island of Phuket – proximity is key. The team then explores how ancient fermentation techniques can be used to maximise flavours, elevating the produce whilst still respecting the true nature of each ingredient. The resulting 10-course tasting menu is well-balanced, thanks to the painstaking detail taken by the hom team. Ultimately, their goal is to surprise curious diners and encourage exploration and discovery. The hom beverage programme will seamlessly complement the food offering.

Protectors and supporters of the local environment, the hom team collaborate closely with local producers. The symbiotic relationship enables knowledge to flow in both directions, ultimately ensuring the safeguarding of local resources and prevention of overproduction.

The experiential journey begins as soon as guests step foot into the magical InterContinental Phuket Resort. As they journey to the breathtaking Sawan Pavillion, where hom is located, guests are regaled with stories of the resorts’ rich Himmapan past.
