Esterre, which was launched in partnership with DUCASSE Paris in late 2019, is rooted in the flavors of Japan’s terroir – taking a contemporary approach to French haute cuisine that aims to showcase the original flavors of the highest-quality local ingredients using French culinary techniques.

Having spent over two decades under the tutelage of Alain Ducasse’s right-hand, Frank Cerutti, Kei Kojima is the perfect fit as chef de cuisine at what is his fourth eatery by Ducasse. Prior to taking the helm at Esterre, Kojima spent five years honing his skills at the Michelin three-starred Le Louis XV at Monte Carlo’s famed Hôtel de Paris, including three as its sous chef. In 2006, he returned to Japan to teach at Le Centre de Formation d’Alain Ducasse in Tokyo, a culinary school for professionals, and had a stint at Benoit bistro before segueing to Beige, a restaurant born from a collaboration between DUCASSE Paris and Chanel’s flagship boutique in Tokyo’s glitzy Ginza district. He played an instrumental role in elevating Beige to its two-Michelin-star status during the more than a dozen years he spent there.

Based in Kamakura – the zen-imbued, beachside town on the outskirts of Tokyo where he continues to reside – Kojima visits the local market every morning to select the freshest ingredients for Esterre before commuting into the city. Having long embraced the concept of drawing from the natural flavors of land and sea by sourcing sustainable, organic ingredients and highlighting the purity and elegant simplicity of their natural flavors, he has been described by Ducasse as “the Japanese chef who understands and practices my culinary philosophy more than any other in the world.”

Just like the town he hails from, Kojima exudes a calmness and a reverence for nature that comes through in his cooking – a notion that is also woven into Esterre’s interior design. Design studio SIMPLICITY, founded by award-winning Japanese interior designer Shinichiro Ogata, originally conceived the space as a tribute to nature.

An earthy color palette and such tactile materials as washi (traditional Japanese paper), textile and wood were chosen to create an ambiance that evokes a sense of harmony between people and nature. Also key to the design concept was an elegant simplicity that would allow patrons to dine, converse and soak in the expansive views of the surrounding Imperial Palace gardens without distraction.

Esterre has consistently achieved a one-star standing ever since it drew the attention of Michelin Guide. Like Kojima, 26-year-old Chef Pâtissier Normand Jubin brings with him notable Michelin experience, having previously acted as chef de partie at the renowned, three-star Restaurant de l’Hôtel de Ville in Crissier, Switzerland and, most recently, as pastry chef at the one-star Pelagos at Four Seasons Astir Palace Hotel Athens in Greece.

A Swiss native, Jubin is the third generation in a family of confectioners behind Jubin Confiseur, a boulangerie-patisserie-confiserie-in-one with a trio of locations throughout Switzerland. It was there, in his grandfather’s and father’s kitchen, where as a child, Jubin began cultivating his passion and know-how for baking, pastry-making and the art of confectionery.

New to Japan, Jubin is embracing the country’s distinct seasons with his dessert presentations and endeavoring to bring more depth and art to what is presented, whether it brings guests back to the familiar flavors and textures of their childhood or stirs up more recent memories of their time in Japan. His spring dessert of ‘crispy and iced buckwheat, torrefied vanilla and anise’, for example, takes inspiration from the three-swirl mitsudomoe symbol that has caught his eye while visiting shrines.

As Esterre’s menu changes with the seasons, Palace Hotel Tokyo’s award-winning Chef Sommelier Takamasa Sato meticulously studies the flavors of every dish before deciding on which pairings to recommend for each course – whether guests prefer alcoholic or non-alcoholic options. With a wine cellar that boasts some 4,800 bottles and encompasses over 500 vintages – of which French labels dominate – there’s no shortage of options to choose from, including a selection of organic, natural and bio-wines.

For Chef Kojima’s vibrant and flavorful ‘roasted sujiara with winter gourd, courgette and black olive marmalade’ that’s on the summer signature prix-fixe menu, Sato suggests a pairing with Château Jun’s Koshu, a domestically produced white wine made with koshu grapes, a varietal that has been grown in Japan for more than 1,000 years. And for the dish’s non-alcoholic pairing, a seasonal mocktail featuring a blend of white grape juice with the umami-rich flavors of premium Royal Blue Tea is suggested.

For Jubin’s refreshing summer dessert of ‘kiwi and tarragon delight with ginger and goat milk emulsion’, Sato recommends a pairing with the Alain Ducasse Sparkling Sake conceived by DUCASSE Paris Chef Sommelier Gerard Margeon and Ryogo Kitahara, master brewer at Maison Shichiken in Yamanashi prefecture. Alternatively, Belgium’s Duc de Montagne non-alcoholic sparkling wine presents an equally refreshing and sophisticated alternative.

As Japan experiences a travel renaissance, Esterre’s team plans to continue heightening the dining experience and playing their part in ensuring Tokyo keeps its crown as the Michelin capital of the world.

Esterre’s prix-fixe lunch options start from JPY 12,000 and prix-fixe dinners from JPY 22,000 per person. Wine pairings start at JPY 6,000 for two glasses.

After over five decades in operation, the landmark Ambassador Hotel Taipei has closed its doors to undergo a complete redesign. Once razed and rebuilt by The Ambassador Hotel Co. Ltd., its brand-new iteration is slated to be unveiled in 2028 as Ambassador Palace Hotel Taipei, a world-class property to be managed by Palace Hotel Co., Ltd.

“It’s fitting that our first luxury project outside of Japan is in collaboration with a brand that trades on its history as an ambassador,” said Daisuke Yoshihara, president of Palace Hotel Co., Ltd.

After all, it was during the original Palace Hotel’s nearly half-a-century tenure that 284 ambassadors from 124 countries made the journey by horse and carriage from the hotel to the Imperial Palace nearby – just across the moat – to present their credentials to the emperor.

“Both properties have played a pivotal role in elevating the hospitality industry in each country. Through this partnership, we will work together to take the Ambassador brand to ambitious new heights, just as we have done with Palace Hotel Tokyo,” added Yoshihara.

The Ambassador Hotel was the first privately owned luxury hotel in Taiwan when it opened in 1964. “Undergoing this massive, six-year reconstruction will allow us to raise the bar on our products and services while further strengthening our legacy of representing the best of Taiwanese hospitality,” said Emmet Hsu, chairman of The Ambassador Hotel Co. Ltd. “We are honored to partner with Japan’s most distinguished luxury hospitality brand to present the best of both to travelers from all over the world, and look forward to leveraging the respective strengths of each as we write a new chapter in history, defined by our shared pursuit of excellence.”

Celebrating its tenth anniversary this year, Palace Hotel Tokyo underwent a similar transformation over a decade ago, with a three-year rebuild from the ground up followed by a re-opening in 2012. Its current iteration stands as heir to a succession of hotels that have held one of Tokyo’s most prestigious addresses, amidst the Imperial Palace gardens, for more than seven decades. Palace Hotel Co., Ltd. will draw on this wealth of experience as it begins a similar journey in Taipei.

Ambassador Palace Hotel Taipei will be located in the trendy Zhongshan district, a hub of culture and business known for its museums and galleries as well as a vibrant dining scene. The original property housed 425 guestrooms, six restaurants and 29 banquet rooms. Following the six-year makeover, the new hotel will debut with 106 rooms and suites. Its facilities will include a fitness center, swimming pool, spa and versatile events spaces as well as a lounge for the exclusive use of in-house guests.

A collective of six dining venues – including a bar on the hotel’s topmost floor – and a bakeshop are slated to present an exciting new addition to the city’s impressive food scene. The Japanese restaurant to be managed by Palace Hotel Co., Ltd. will be one of the highlights.

UK-based G.A Group, led by Terry McGinnity, has been appointed to craft the hotel’s interiors. The award-winning design firm was responsible for much of Palace Hotel Tokyo’s interiors, creating refined spaces that harmoniously blend with the natural beauty surrounding the property and celebrate the country’s rich heritage. The new Taipei property will echo the same sentiment, exuding a timeless aesthetic that, while rich in details, is overarchingly simple and elegant.

Mitsubishi Jisho Design Inc., which spearheaded the architectural direction for Palace Hotel Tokyo, will be playing a similar role in the Taipei project. In addition to the hotel component, the expansive property will encompass 73 luxury private residences housed in an adjacent, 23-story tower.

“As Palace Hotel Tokyo embarks on its next decade, we’re enthused by the continued rise in demand for sophisticated travel experiences across Asia,” said Masaru Watanabe, Palace Hotel Tokyo’s senior managing director and general manager. “Taiwan, with its worldly appeal and cosmopolitan travelers – many of whom are Japanophiles – makes perfect sense as the first step of our brand’s overseas expansion.”

Ambassador Palace Hotel Taipei will be situated at 63, Section 2, Zhongshan North Road, Zhongshan District, Taipei. Its location is an approximate 15-minute drive from Taipei Songshan Airport and a 40-minute drive from Taoyuan International Airport. Shuanglian Station, the nearest metro station, is a mere 5-minute walk from the hotel. Well-known landmarks such as Taipei 101 and Taipei World Trade Center are a 20-minute drive away.

Six Premier Suites were officially unveiled this month, adding a mid-range category to the hotel’s now-seven categories of suites, which range in size from 75 square meters to 250 square meters (810 – 2,690 square feet).

The hotel turned to the award-winning, luxury hospitality design firm that originally fashioned its interiors, G.A Group, to envision the new suites. Drawing on the elegant-simplicity aesthetic the hotel is known for and taking into account the growing demand for luxury accommodations that cater to longer-stay guests, the property conceived the 90-square-meter (970-square-foot) Premier Suites to better suit business and leisure travelers who desire more space for work and play.

“The luxury market has proven to be very resilient, as there’s always a demand for hotel suites tantamount to pied-à-terres among those accustomed to traveling the world and expecting their accommodations to exude the same level of luxury and sophistication as their own homes,” said Daisuke Yoshihara, president of Palace Hotel Co., Ltd. about the decision to expand the hotel’s offerings. “The addition of these new suites exemplifies our company’s commitment to continuously raising the bar on the products and services that we offer.”

Each Premier Suite’s living space features two distinct areas – a spacious lounge with ample seating and a separate, multi-purpose space in which to dine or work. In the bedroom, which comes outfitted with a dressing table, a walk-through closet leads to an ensuite bathroom with double vanity and separate soaking tub and rain shower. Guests can choose between a king-size bed or two oversized twin beds.

Spread over floors 10 – 15 of the hotel, each of the new suites features two separate balconies on which to dine alfresco while taking in views of Wadakura Fountain Park, the Imperial Palace gardens and the city skyline beyond. In keeping with the original design directive, the verdant landscape surrounding the property served as inspiration for the interiors, with textural elements and an earthy color palette of mossy green, soft browns and light taupe being drawn from the natural environment.

A number of design features add a sense of warmth and richness to the space, including polished timber floors, plush fabric wall coverings and bespoke rugs patterned to echo the wabi sabi beauty of moss as it emerges from untended spaces. Decorative elements range from contemporary Japanese ink wash paintings to sculptural porcelain and ceramic pieces.

The furnishings and artwork are all original and exclusive to Palace Hotel Tokyo, most having been commissioned specifically for the new suites. Curated by Art Front Gallery, the art pieces were all done by contemporary Japanese artists and chosen to reflect the hotel’s connection to nature and the beauty of its surroundings. Japanese sumi (ink wash) paintings reflecting award-winning artist Naoto Sunohara’s abstract, aerial perspectives on the vast Imperial Palace gardens and the green-roofed palace buildings situated within hang prominently in each suite.

In addition to the artwork, the destination is further reflected in uniquely Japanese touches such as the bath linens made in Imabari – a city renowned for over a century for the quality of its towel production – the nambu-tekki cast iron teapots, tea cups handmade in the traditional Mashiko-yaki style of pottery, and Echizen lacquerware tea cup saucers.

For optimum flexibility, each Premier Suite can be expanded into a two-bedroom unit when the adjoining Club Deluxe King or Twin with Balcony room is also booked. Suite guests also enjoy Club Lounge access and privileges, which include private check-in, check-out and concierge service as well as daily breakfast, afternoon tea and evening cocktails and canapés. A private meeting room that seats up to six as well as an outdoor terrace offering captivating vistas of Tokyo round out the 172-square-meter (1,851-square-foot) space’s facilities.
