Gastronomic Gourmet Week at You & Me Maldives

900 599 wttc2

Gastronomic Gourmet Week at You & Me Maldives - TRAVELINDEXRaa Atoll, Maldives, May 9, 2025 / TRAVELINDEX / From 19 to 24 May 2025, Gourmet Week, one of the most anticipated events of the gastronomic calendar, will be taking place at You&Me Maldives by The Cocoon Collection, the exclusive adults-only resort nestled in the Raa Atoll.

The undisputed protagonists of this new edition are the Michelin-starred Chef Andrea Berton and the Corporate Executive of The Cocoon Collection Chef Giovanni De Ambrosis, who together will give life to a unique culinary journey, capable of blending Mediterranean elegance with the innovation and warmth of local Maldivian ingredients.

“Cooking in the Maldives is always a magical experience. The setting is unique and stimulates creativity.  I love bringing the flavours of our Italian tradition into dialogue with the wonderful local ingredients.  It’s a true meeting of seas and cultures,” enthusiastically declares Chef Berton, who returns to tread the sand of You&Me with its refined and contemporary cuisine.

“Collaborating on such a high-calibre event means being able to combine the best of two worlds: tradition and innovation. Together with Andrea, I want to tell a story of flavours that unite the Mediterranean and the exotic riches of the Maldives. For us at The Cocoon Collection, each dish is an invitation to travel and to the love of cooking,” adds Giovanni De Ambrosis.

The gastronomic journey will open on Wednesday 21 May at 7.30 pm with an exclusive dinner at The Sand restaurant. Under the stars, guests can indulge in the refined Branzino Maldivian in black with local fish soup and salicornia, symbol of the meeting between the South Seas and the elegance of Italian cuisine.

Subsequently, on Friday 23 May from 12.30, the open-air restaurant Green Carpet will host a signature lunch: Roasted scallops, asparagus, papaya and almonds, a dish that enhances the perfect combination of sweetness, freshness and the richness of local ingredients reinterpreted in Mediterranean key.

A true Mediterranean immersion in the Maldivian seas: the Gourmet Week of You&Me Maldives thus becomes a hymn to the love for cuisine and the territory. The event, in fact, is not only an opportunity to taste top-quality dishes, but also a sensory experience that celebrates the dialogue between cultures, traditions and passion for good food.

You&Me Maldives confirms itself, once again, as the ideal stage to meet and discover authentic emotions, where the beauty of the landscape marries with the culinary mastery of the two Chefs, offering their guests unrepeatable moments of taste, refinement and of love.

Chef Maksym Chukanov Brings a Bold New Vision to L’Arôme by the Sea - TRAVELINDEX

Chef Maksym Chukanov Brings a Bold New Vision to L’Arôme by the Sea - TRAVELINDEXPhuket, Thailand, May 8, 2025 / TRAVELINDEX / L’Arôme by the Sea is proud to welcome Executive Chef Maksym Chukanov, ushering in a new era for Phuket’s acclaimed oceanfront restaurant. With nearly two decades of experience in Michelin-starred kitchens across Europe and Asia — including Noma 2.0 in Copenhagen, Restaurant Ikarus in Salzburg, and Cure in Singapore — Chef Maksym brings a globally refined yet deeply personal approach to the island’s fine dining landscape.

His arrival marks a thoughtful evolution of the restaurant’s identity: from its French gastronomic roots toward a more expressive vision of modern coastal fine dining, one that captures the rhythm of the Andaman Sea and the richness of the region’s ingredients. At the heart of his cuisine lies a philosophy centered on clarity, sustainability, and emotional resonance. The menu celebrates the purity of premium and underutilized seafood, enhanced by produce sourced from trusted partners across southern Thailand.

Drawing on a multicultural foundation, Chef Maksym’s culinary language blends French refinement, Japanese precision, and the bold, aromatic character of Southeast Asian flavors. Techniques such as citrus fermentation, kosho, miso, and beurre blanc are not used for complexity’s sake, but rather to bring depth and balance to each plate—allowing ingredients to speak for themselves in their most elegant form.

Under his leadership, L’Arôme by the Sea embraces a low-waste and ingredient-focused approach, with a commitment to ethical sourcing, whole-fish utilization, and thoughtful storytelling through food. Every element of the experience—from the curated beverage pairings to the tranquil sea-view setting—has been designed to create an intimate and immersive journey.

Chef Maksym’s arrival reaffirms L’Arôme by the Sea’s position at the forefront of Phuket’s fine dining scene. The new tasting menu is not just a celebration of the sea—it is a confident step forward into a more sustainable, soulful, and internationally relevant culinary future.

Its proximity to attractions further enriches the district’s appeal for both business and leisure travelers, showcasing the area’s vibrant diversity and limitless potential for exploration.

As part of the larger Jubilee Prestige Tower – named in honor of Ratchadaphisek Road’s original purpose to commemorate the Silver Jubilee of His Majesty King Bhumibol Adulyadej The Great – the JW Marriott Hotel Bangkok Ratchadapisek will emerge as a destination in its own right. AWC aims to establish a forward-thinking environment that fosters Thailand’s long-term economic success. Red Sea Global unveils Laheq, an extraordinary resort island

Red Sea Global unveils Laheq, an extraordinary resort island - TRAVELINDEX

Red Sea Global unveils Laheq, an extraordinary resort island - TRAVELINDEXRiyadh, Saudi Arabia, May 8, 2025 / TRAVELINDEX / Red Sea Global (RSG), the developer behind regenerative tourism destinations The Red Sea and AMAALA, has unveiled Laheq Island, a new residential community at The Red Sea, promising to bring an island lifestyle to Saudi Arabia for the first time.

Laheq marks the first plans beyond Phase One of The Red Sea that have been revealed to date. The destination welcomed the first guests in 2023 and now has five hotels open, plus an airport welcoming a regular schedule of domestic and international flights. Laheq, which is scheduled to open in 2028, is also the first development at The Red Sea with a primary focus on residential property ownership supported by an exceptional hospitality offering.

“Whether it’s for guests visiting or residents who choose to own a piece of The Red Sea, at Laheq they will experience luxury living with an enriching resort community that brings people together and fosters life-long bonds,” said John Pagano, Group CEO of Red Sea Global.

Just beyond the western shore of Saudi Arabia is the world’s fourth-largest barrier reef. It surrounds an archipelago of 92 pristine islands and is home to more than 2,000 species of fish, many found nowhere else in the world.

Of all the islands in the archipelago, RSG chose the intimate jewel that is Laheq to become an extraordinary island community. It is 400 hectares of white sand beaches, vibrant coral reefs and clear blue waters.

New opportunities to own at The Red Sea

Private residences on Laheq take their cues from the character of the land, sea, sky and flora of the island. Natural timbers create elegant, shaded canopies, pergolas, and garden courtyards.

Laheq Island offers extensive amenities, entertainment and activities for residents and guests. A 115-berth marina, and sailing and watersports schools serve the seafaring set while a racket club, fitness center, sports field, picturesque 18-hole golf course and well-appointed park satisfy those inclined toward land-based activities. A bustling souq offers an amazing tapestry of sights and sounds with carefully curated products and essentials.

Additionally, residents and guests can indulge in a diverse range of premium beach clubs and dining experiences, each offering its own unique atmosphere from laid-back, barefoot settings to more refined venues. These establishments will highlight the best of local and international cuisine, with a focus on freshly sourced ingredients and exceptional culinary craftsmanship.

The island will also have two luxury resort hotels, with one focused on wellness and the other providing a more energetic and lively lifestyle offering that will resonate with adventurous and curious travelers.

“To date, we have established our reputation as a developer of regenerative tourism destinations, but we are more than that. We are a vertically integrated real estate developer and operator. This includes creating luxury private residences, delivering on Vision 2030’s goal to make Saudi Arabia a top destination to live, work and travel, while further driving economic diversification and jobs growth,” added Mr. Pagano.

Sustainable design

Foster + Partners, one of the world’s leading architectural firms, led the design of Laheq Island with a concept called “Forever Garden” because of its abundant use of plant life and vivid greenery.

The centerpiece is “The Ring”. The 800m diameter structure encompasses luxury apartments, hotels and retail, which encircle the white sand beaches of the island’s lagoon.

Norman Foster, Founder and Executive Chairman, Foster + Partners, said: “Our vision is grounded in a deep appreciation for Laheq Island’s outstanding natural beauty. Residents and visitors are invited into a serene garden that engages all the senses and offers panoramic views of the magnificent surroundings.”

Regenerative tourism

The opening of The Red Sea and its natural wonders is made possible by RSG’s commitment to regenerative tourism. The developer coined the term to describe destinations that not only preserve but enhance their natural surroundings.

RSG has committed to planting and enhancing the condition and habitats of 50 million mangroves and vowed to protect and regenerate corals in the Red Sea and beyond. When fully complete, The Red Sea – including Laheq Island – will become the world’s largest destination to run on 100% renewable energy.

RSG is on track to compete all 16 hotels that make up Phase One of The Red Sea. Upon full completion in 2030, The Red Sea destination will comprise 50 resorts, offering up to 8,000 hotel rooms and more than 1,000 residential properties across 22 islands and six inland sites. The dedicated international airport, Red Sea International, means residents always have quick and easy access to their homes.

Laheq is a key element of RSG’s expanding residential portfolio, managed by Red Sea Residences. For more information about Red Sea Residences, Laheq or to register your interest, visit Red Sea Global’s official website.

New Meliá Pattaya Hotel Unveils Majestic Restaurant & Sky Bar

900 585 wttc2

New Meliá Pattaya Hotel Unveils Majestic Restaurant & Sky Bar - TRAVELINDEXPattaya, Thailand, May 8, 2025 / TRAVELINDEX / With a dramatic design referencing calligraphy, vistas of the Gulf of Thailand, and Cantonese and Sichuan cuisine promoting health and sustainability, show-stopping Yitong Chinese Restaurant & Sky Bar has debuted in vibrant Pattaya.

The rooftop restaurant and bar opened this month on the 12th floor of Meliá Pattaya Hotel, which celebrated its grand opening on February 14 this year on Second Road, known as Pattaya Sai Song, near an array of attractions.

As soon as they set foot in the venue, diners are greeted by a ribbon-like ceiling sculpture installation that makes for a compelling contemporary interpretation of calligraphy. Characterised by gold and black trimmings with pops of crimson to signal prosperity, the restaurant’s colour palette is magnified by the backdrop of floor-to-ceiling windows affording views of Pattaya’s beach and sky.

In addition to the main dining area with soft lighting, earthy tones and natural textures inspired by the landscapes of Chonburi and Northern Thailand to evoke calm and refinement, the sky bar’s chic rooftop space features lush greenery and affords sweeping views. Yitong also offers “wellness alcoves”; quiet corners designed for intimate conversations over dinner and drinks.

Paying homage to the longstanding Chinese communities of Chonburi and their shrines and markets, the name Yitong translates to “together”, with dishes served family-style to encourage shared meals and connectedness.

The food and beverage menus have a prime focus on “goodness for the body, mind and soul”. In support of sustainability and local communities, fresh ingredients are locally sourced from Chonburi’s fishermen and farmers. Organic vegetables come from Northern Thailand’s Royal Project farms that aim to improve the quality of life for hill tribe people, reduce opium production and promote sustainable development through alternative agriculture.

Signature dishes include steamed Chonburi fish with ginger and lime to promote heart health and detoxification, and double-boiled herbal soup, a Cantonese speciality made with locally grown Thai herbs, ginseng and goji berries to heal and revitalise the body. Packed with vitamins and protein, the five-spice tofu and vegetable stir-fry celebrates the earthy richness of Royal Project produce. Other menu highlights include Sichuan Mala free-range chicken salad with Northern Thai greens and peppercorn dressing, and the “Longevity” noodles with prawns made up of fresh Chonburi prawns and Royal Project vegetables.

“Wellness is at the heart of every meal at Yitong,” said Meliá Pattaya Hotel’s General Manager Javier Gimeno. “We place an emphasis on a nourishing dining experience. Cantonese cuisine is known for its light, fresh and delicate approach via steaming, poaching and stir-frying to retain nutrients, and Sichuan cuisine’s bold and invigorating flavours, such as chili and peppercorns, have health benefits such as improving circulation and metabolism.”

“Kuaile De” made up of gin infused with goji berry, honey, lemon juice, topped with cava, “Chun Hou” with brandy, orange curacao, lime juice, rosella tea, and rose syrup, and “Tian De” featuring Campari with ginseng, Chinese liquor, and brown sugar syrup are among Yitong’s innovative signature cocktails.

Mocktails include “Year of the Snake”, a concoction of kiwi juice, ginger and lemongrass syrup, pear juice and honey, “Virgin Chit-Cha Toddy” with lemon juice, ginger syrup, blossom syrup, oolong tea and cinnamon syrup, and “Chinese NY Rita” with yuzu syrup, goji berry syrup, orange juice and lemon juice.

Gastronomy Tourism Takes Center Stage in the Agenda for Africa - TOP25RESTAURANTS.comArusha, Tanzania, May 8, 2025 / TRAVELINDEX / The 2nd UN Tourism Regional Forum on Gastronomy Tourism for Africa reinforced the region’s growing commitment to make gastronomy tourism a key driver in social and economic development.

Co-organized with the Basque Culinary Center, the event celebrated the continent’s culinary richness and represented a strong step towards stronger cooperation among tourism and gastronomy stakeholders – producers, chefs, entrepreneurs, tour operators and ministries of tourism.

The Forum was officially opened by His Excellency Dr. Philip Isdor Mpango, Vice-President of the United Republic of Tanzania, underscoring the political commitment to advance gastronomy tourism in the country. In his address, he called for greater visibility of African diverse food cultures, stronger regional branding, enhanced collaboration with local producers, and more sustainable practices, highlighting the sector’s potential to drive tourism, strengthen food systems, empower women and promote the consumption of healthy foods across the continent.

This year’s edition also welcomed Her Excellency Dr. Auxillia C. Mnangagwa, First Lady of the Republic of Zimbabwe, under whose patronage the inaugural regional edition of the Forum for Africa was held last year. Her leadership has been instrumental in advancing African gastronomy on the global stage.

Opening the event, UN Tourism Secretary-General, Zurab Pololikashvili praised Tanzania for having placed gastronomy tourism high on its agenda for economic growth, culture preservation and community development. He said: “Tourism is a powerful tool for development, and gastronomy brings us even closer to communities. Africa’s culinary heritage is a key asset – one that can generate jobs, support rural development, and strengthen the continent’s global identity.”

Africa’s culinary heritage is a key asset – one that can generate jobs, support rural development, and strengthen the continent’s global identity

Priorities for Gastronomy Tourism in Africa

Bringing together over 400 participants from 30 countries, the Forum discussions focused on policy frameworks with the participation of the Ministers of Tourism of Tanzania, Zimbabwe and the Democratic Republic of Congo, and the Deputy Minister of South Africa, as well as the FAO Representative in Tanzania.

Education and skills, national targeted strategies, communication and product development emerged as main priorities to advance the agenda of gastronomy tourism in Africa. To advance this, the Secretary-General announced that 100 scholarships will be made available to students from Africa to benefit from the UN Tourism Online Academy. The scholarships will help strengthen the capacities of national tourism professionals in the field of gastronomy and culinary arts.

On the occasion, UN Tourism and Chefs in Africa signed a Memorandum of Understanding. The partnership will focus on advocacy, promotion and skills to strengthen gastronomy tourism across the continent.

Bolder brands and stronger ecosystems

The Forum further underscored the need to strengthen local food ecosystems by engaging with producers, safeguarding culinary heritage through the promotion and use of native crops, documentation of products, processes and traditional recipes, and more sustainable food systems.

Participants also emphasized the need to elevate the regional and global image of African cuisine, highlighting the role of food festivals, cultural events, and storytelling in showcasing the continent’s culinary identity and reshaping perceptions worldwide.

Building on its continued success, the Regional Forum – part of UN Tourism Agenda for Africa –  is consolidating as a strategic platform gastronomy tourism in the region placing the issue higher on the tourism agenda. The Forum will return for a third edition, to be held in Sierra Leone.

A Royal Celebration with the RBSO

1015 593 wttc2

A Royal Celebration with the RBSO - TRAVELINDEXBangkok, Thailand, May 7, 2025 / TRAVELINDEX / On the auspicious occasion of His Majesty the King’s Coronation on 4th May 2019, the Royal Bangkok Symphony Orchestra (RBSO) will perform a concert entitled “Soundscapes”, which includes music from Thailand, France and Conductor Douglas Bostock’s native country, Great Britain. It will take place in the Main Hall of the Thailand Cultural Centre (TCC) on Friday, 9th May, at 7:30 pm.

“Siam Soundscapes”, which opens the programme, was composed by National Artist Narongrit Dhamabutra in 2024 to celebrate the 72nd birthday of His Majesty the King. The main concept of the piece is to bring together various musical sounds from different regions of Thailand and intertwine them into a unified whole. This symbolises the profound influence of the Thai monarchy, past and present, which has reigned over the nation with great majesty, extending its benevolence to all corners of the kingdom and bringing peace and prosperity to the Thai people.

The soloist of the evening will be the renowned Japanese Cellist, Dai Miyata, making his debut in Thailand on this occasion. In 2009, he won the Grand Prix in the 9th Rostropovich Cello Competition, becoming the first Japanese competitor to do so. In fact, he won first prize in all of the contests in which he has participated. Miyata has since been actively performing as a soloist with major orchestras and as a chamber musician in Europe and Asia. With the RBSO, he will perform Camille Saint-Saëns’ charming yet virtuoso Cello Concerto No.1 in A minor, composed in 1872. It is widely considered to be the greatest of all cello concertos.

Two works by Ralph Vaughan Williams, one of England’s most significant composers, make up the second half of the “Royal Celebration” concert. Firstly, his beautiful arrangement of the famous tune, “Greensleeves”, attributed to none other than Britain’s King Henry VIII. The Fantasia on “Greensleeves” is scored for two solo flutes, harp and strings alone and familiar in this guise to music lovers the world over. It is followed by Vaughan Williams’ 8th Symphony, which he completed in 1955, the same year as Maestro Bostock’s birth. He and the Symphony both celebrate their 70th this year. The composer, whose family name is Vaughan Williams (not Williams, as is often mistakenly assumed) was in his eighties when he wrote his relatively short 8th Symphony. He wanted to show himself to still be a composer “young at heart” by incorporating a wealth of percussion instruments in the score, including tuned gongs, an idea he got from hearing Puccini’s opera “Turandot” about a Chinese princess. The outer movements of the Symphony are for full orchestra, whereas the humorous second movement is for winds alone, and the lyrical third is for the strings section. The work closes with a glorious explosion of orchestral colour, crowned by the celebratory chiming of bells. The RBSO will be giving the Thai premiere of one of the most wonderful British symphonies. Not to be missed!

The honour, which is among the most coveted distinctions in the global hospitality industry, draws on reader input as part of the industry-leading travel magazine’s ‘World’s Best Awards’. Raffles Grand Hotel d’Angkor was highlighted on the list for a fourth consecutive year.

“An extraordinary setting. Design that feels both unexpected and of-the-moment. Service that goes above and beyond. When a hotel feels truly exceptional, our readers are slow to forget,” Travel + Leisure wrote as it introduced this year’s designated hotels.

Raffles Grand Hotel d’Angkor originally opened in 1932 as a rest stop for archeologists and adventurers exploring the ancient kingdom of Angkor Wat. The hotel features an authentic expression of 1930s French Art Deco style with beautifully refined rooms, suites and villas blending old-world charm with Cambodian influences and contemporary detail.

Last year, the hotel unveiled a ‘Curated Journeys’ menu offering singular excursions, including a ‘Bespoke Temple Dinner’ served by candlelight at the temple complex of Angkor; a ‘Lost Civilisations of Angkor by Vespa’ tour, where the ancient world meets the here-and-now; and the ‘Siem Reap Art Tour’, which offers an inside look at the city’s bustling art scene; among others.

Nearly all of Raffles Grand Hotel d’Angkor’s 119 guest rooms and suites were fully refurbished in a meticulous three-year renovation project that concluded in June 2022. One of the hotel’s most distinguished attributes—its classic metal and timber elevator in the lobby—remains, as does the vintage ambience of The Elephant Bar. Its on-site ‘Resort Programme’, meanwhile, showcases heritage and traditions at the hotel.
