The new ‘Dining Under the Stars’ concept on Ambassador Cruise’s overnight cruises features two menus, crafted by executive chef Nguyen Gia Thien, accompanied by live entertainment on the luxurious vessels’ elegant 360-degree sundecks.

Softly-lit, white tablecloth service and an incredible backdrop of myriad limestone karsts silhouetted against the night sky evoke a romantic atmosphere.  Guests choose between international and Vietnamese dinner menus; both underpinned by fresh, premium ingredients.

As part of the five-course “Heritage By Night” menu, guests select two main courses from five gourmet options including roasted sea bass fillet with chorizo butter and zucchini emulsion, pan-seared beef medallion served with crispy potato and meat jus, and caramelized duck breast flambé with gnocchi and orange jus.

An opportunity to sample authentic traditional Vietnamese cuisine, the ‘Four Seasons’ menu includes the likes of deep-fried Halong squid cake with young sticky rice, marinated beef and pomelo salad, and stir-fried scallop with organic mushroom.

The Dining Under the Stars experience’s cherry on top is Ambassador’s international live band performing a medley of classic hits in English, Vietnamese, Korean, Indian and Filipino every day of the week except for Monday.

“Our ‘Dining Under the Stars’ concept builds upon the magic of Halong and Lan Ha bays by creating a one-of-a-kind sensory experience under a canopy of stars,” said Nguyen Cao Son, chairman of Asia Premier Cruises (APC) Corporation that owns and operates Ambassador Cruise. “Ambassador Cruise is a pioneer, bringing compelling new experiences to Halong Bay that encourage travellers to return again and again.”

Chef Thien’s menus have been influenced by his recent travels to France, where he trained extensively. “My training in France was transformative in that I could honor my cultural heritage and embrace international gastronomic excellence,” he said.

“Dining Under the Stars” is available for booking on all overnight Ambassador Cruise journeys in Halong Bay and Lan Ha Bay. It will also be available on dinner cruises during summer months for an additional charge.

Since launching its first vessel in 2021, Ambassador Cruise has made a name for itself as the leading luxury cruise operator on Halong Bay. Its vessels include Ambassador I, Ambassador II, Ambassador Signature and Lavoya Boutique Day Cruise. A Legacy of Culinary Innovation
The story of butter chicken dates back to post-Partition India in 1947, when Kundan Lal Jaggi, a refugee from Peshawar, co-founded a restaurant in Delhi’s Daryaganj neighbourhood. It was in this kitchen that he created the now-iconic Butter Chicken and Dal Makhani — dishes that would go on to define North Indian cuisine for generations across the world. Jaggi is also credited with inventing the Chicken Pakora and popularising classics such as Tandoori Chicken, Mutton Seekh, and Mutton Burrah, which remain staples in Indian restaurants.

As the story goes, one late night, a group of hungry guests arrived late at the restaurant. A regular guest suggested Jaggi prepare a dish with gravy so everyone could enjoy a hearty meal. With only leftover tandoori chicken available, Kundan Lal Jaggi crafted a rich curry using tomatoes, fresh butter, and a blend of secret spices. He then added the tandoori chicken to the gravy, which is why this iconic dish is a dual recipe, with the chicken first cooked in the tandoor and then folded into the luscious, buttery tomato base.

On another occasion in 1947, a diner named Sucha Singh encouraged Jaggi to experiment with the traditional Punjabi maa ki dal (black lentils). Jaggi slow-cooked the lentils overnight on the tandoor with tomatoes, fresh white butter, and handpicked herbs and spices — creating what would become the legendary, creamy Dal Makhani.

Today, this culinary legacy is carried forward by Raghav Jaggi, Kundan Lal Jaggi’s grandson, and Amit Bagga, a seasoned, award-winning restaurateur. Childhood friends, the duo co- founded Daryaganj in 2019 as a tribute to the pioneering flavours created by Raghav’s grandfather. Their shared vision now extends beyond India, with Bangkok as the first international outpost.

The experience concludes with an opportunity to engage with San residents and purchase handmade crafts, such as woven baskets and wood carvings. Ombili means “Peace” in Ukanyama language and it makes for a truly moving, memorable experience.

Advance booking is required, facilitated by Onguma, with all payments going directly to the foundation. At least one day’s notice is required to ensure this special tour experience.  The tour is for self-drive guests only and costs N$ 750 per person, ideally paid in cash in Namibian Dollars.

The Poor and Vulnerable Risk Being Overlooked in Escalating Trade Tensions - TRAVELINDEXGeneva, Switzerland, April 5, 2025 / TRAVELINDEX / As major economies are set to impose sweeping new tariffs, UN Trade and Development (UNCTAD) alerts that the global trade system is entering a critical phase – threatening growth, investment, and development progress, particularly for the most vulnerable economies.

Global economic growth could decline further: In a low-growth, high-debt global economy, higher tariffs risk weakening investment and trade flows – adding uncertainty to an already fragile context. This could erode confidence, slow investment, and threaten development gains, particularly in the most vulnerable economies.
The most vulnerable will bear the highest cost: Economies with minimal responsibility for global trade imbalances are facing severe penalties – despite being the least equipped to absorb new shocks.
Dialogue – not escalation – is the only path forward: The need for trade reform is clear. Trade imbalances, concentrated gains, and outdated rules must be addressed – without affecting those least responsible.

This hurts the vulnerable and the poor,” said UNCTAD Secretary-General Rebeca Grynspan. “Trade must not become another source of instability. It should serve development and global growth.” For businesses and policymakers alike, unpredictability and uncertainty in trade and investment is becoming a serious obstacle to growth and planning.

Vulnerable countries most impacted
Just 10 of the nearly 200 U.S. trade partners account for almost 90% of its trade deficit. Yet, for example, least developed countries and small island developing states – responsible for just 1.6% and 0.4% of the deficit, respectively – are being affected. They will neither help balance the trade deficit nor generate significant revenue.

Many low-income economies now face a “perfect storm” of worsening external conditions, unsustainable debt levels, and slowing domestic growth.

Time for dialogue, not escalation
While the need for trade reform is clear, UNCTAD stresses that the solution must come through dialogue and negotiation. Trade imbalances, concentrated gains, and outdated rules must be addressed – without sacrificing those least responsible.

“This is a time for cooperation – not escalation,” Grynspan said. “Global trade rules must evolve to reflect today’s challenges, but they must do so with predictability and development at their core, protecting the most vulnerable.”

UNCTAD calls on decision makers to urgently reconsider the tariffs imposed on the vulnerable countries, as these measures could inflict great pain on millions of people.
