Michelin Guide Thailand 2024 Shining New Stars

Bangkok, Thailand, December 14, 2023 / TRAVELINDEX / At the Michelin Guide Ceremony Thailand, Michelin has officially unveiled The Michelin Guide Thailand 2024 edition, revealing its much-awaited full restaurant selection, and celebrated the accomplishments of Thailand’s vibrant and dynamic culinary community.

The newly released Guide features 447 establishments – with 7 two Michelin Stars (2 promoted from one Michelin Star), 28 one Michelin Star (3 newcomers, and 3 promoted from Michelin Selected), 196 Bib Gourmand (28 newcomers, and 4 moved from Michelin Selected), and 216 Michelin Selected entries (37 newcomers). Among new additions to the Guide, 23 are from Ko Samui (4 Bib Gourmand, and 7 Michelin Selected entries) and Surat Thani Mainland (8 Bib Gourmand, and 4 Michelin Selected entries), the newly covered territories in this seventh local edition.

According to Gwendal Poullennec, International Director of the Michelin Guides, with an abundance of great local produce, including the freshest premium seafood, combined with a melting pot of cultures, Ko Samui and the mainland city of Surat Thani – the two additions in the beautiful gulf of Thailand – boast a vibrant and varied culinary scene that further contributes to The Michelin Guide Thailand’s existing restaurant selection.

“Our inspectors have experienced the true diversity that Thailand has to offer, from modern restaurants pushing culinary boundaries to simple street food stalls – continuously reinforcing Thailand’s rich gastronomic culture and heritage. The 2024 edition of The Michelin Guide Thailand highlights not only these exceptional culinary experiences, but also the latest trends in the country’s culinary world,” said Mr. Poullennec.

Underlying trends of Thailand’s culinary and gastronomic scene: Modern Thai cooking, healthy cuisines, sustainable production, and female prominence

Having travelled the length of the country, Michelin Guide inspectors noted the continued growth of a new breed of modern Thai restaurants helmed by a new generation of young and passionate Thai chefs, who are pushing the boundaries of what is perceived as modern Thai cooking. In addition, there has been a growth of reservation only, counter dining operations – serving modern and innovative tasting menus.

The trend for healthy and vegetarian cuisine also continues in Thailand, with the demand for plant-based and organic foods steadily rising as consumers have become more attuned to their consumption habits. This health-consciousness has led to a surge in demand for organic and healthy food products. Therefore, the trend of using locally produced, home-grown ingredients and of sustainable production is becoming more prominent – especially in upscale restaurants.

Particularly notable is the growing number of female chefs and entrepreneurs in the food and beverage industry, who play significant roles in developing and shaping the culinary scene across the entire country.

2 restaurants newly receive two Michelin Stars
In the 2024 Michelin Guide Thailand edition, two Michelin Stars listing adds 2 new entries promoted from the one Michelin Star rating: Baan Tepa, where the farm-to-table philosophy is brought to the skillfully crafted, detailed cooking on its contemporary Thai tasting menu, made with seasonal ingredients sourced from sustainably minded producers and its backyard; and Gaa, a contemporary Indian restaurant that combines old-school cooking with modern techniques and presentation – serving assured and skillful dishes where finely judged spicing, extraordinary flavor combinations and contrasts in texture and temperature stand out.

It is noteworthy that both restaurants are run by female chefs: Chef Chudaree ‘Tam’ Debhakam of Baan Tepa, and Chef Garima Arora of Gaa. While Baan Tepa now boasts two Michelin Stars in the 2024 Guide after winning one Michelin Star upon entering the 2023 Guide; Gaa is only the second Indian restaurant in the world to currently hold two Michelin Stars.

6 restaurants newly receive one Michelin Star
Of the 6 new one Michelin Star entries, 3 are newcomers making it into the Guide for the first time, and the other 3 are promoted from Michelin Selected.

The 3 newcomers awarded one Michelin Star are: INDDEE, a modern Indian restaurant that takes diners on a journey around the different regions of India with its set menu using the charcoal grill extensively throughout; NAWA, a Thai contemporary restaurant that embraces the innovation concept, using modern techniques to produce central Thai cuisine with authentic yet bold flavors, and a seasonal tasting menu of finger food, small bites and modified versions of main courses; and Samrub Samrub Thai, a Thai restaurant offering a truly original tasting menu (changed bi-monthly) featuring ancient Thai recipes reproduced to trace the ages and crafts a complex amalgamation of aromas.

The 3 one Michelin Star laureates promoted from the Michelin Selected are: Mia, a restaurant offering modern European cuisine with Asian influences through the seasonal ‘Taste of Mia’ menu that shows off dishes with complex, well-balanced flavors in a 5- or 8-course feast – with vegan and vegetarian options, as well as with cocktail, mocktail and wine pairings available; Resonance, a restaurant offering a seasonal tasting menu that features dishes inspired by the chef’s past experience working around the world, with a tea pairing option upon advance request; and Wana Yook, a restaurant offering an innovative seasonal tasting menu inspired by “Khao Gaeng” or “rice topped with curry”, whereby every course features flavorsome Thai contemporary dishes with rice from different regions of Thailand.

A restaurant awarded with a Michelin Green Star for its inspiring sustainable approach
Joining PRU, Haoma and Jampa, who all hold Michelin Green Stars highlighting their commitment to sustainability, is a creative French restaurant, J’AIME by Jean-Michel Lorain. The chef and the team have made great advancements in developing their sustainable approach by building close relationships with Thai producers, examining in detail their kitchen practices – including monitoring their waste, abiding by strict recycling systems and many other smaller initiatives – all contributing towards their goal of striving towards a more sustainable future. With this newly-awarded restaurant, the Michelin Guide Thailand selection has a total of 4 Michelin Green Starred establishments.

Four Michelin Guide Special Awards
With its Special Awards, the Michelin Guide shines a light on talented professionals in Michelin-recommended restaurants who raise the gastronomic experience to a higher level. In doing so, they demonstrate how varied and exciting the hospitality industry is to work in.

The Michelin Young Chef Award
The 2024 Michelin Young Chef Award recognizes a young chef whose exceptional talent and great potential have impressed the inspectors. This year, the Young Chef Award, presented by Blancpain, is given to Ms. Chudaree ‘Tam’ Debhakam from Baan Tepa. A Thai chef with a bright future, Ms. Debhakam’s rise has been meteoric. After a stage at Gaggan, a role at the Water Library Group, and being a Chef de Partie at Blue Hill at Stone Barns in New York State, she returned to Thailand and subsequently made waves in the Thailand culinary scene when her restaurant, Baan Tepa, was awarded a Michelin Star upon entry in the 2023 Guide, and now awarded two Michelin Stars in only its second year in the Guide!

The Michelin Opening of the Year Award
The 2024 Michelin Opening of the Year Award is given to individuals and team, for the successful opening of a dining venue over the past 12 months, with a creative degustation concept and a cuisine approach which has had an impact on the local gastronomic scene. This award, presented by UOB, is awarded to Mr. Witchupol “Nay” Charoensupaya who is the owner of NAWA. NAWA opened in early 2023, and has entered the 2024 Guide with a Michelin Star. Napol Jantraget, or “Chef Joe”, heads the kitchen along with his partner, Saki Hoshino, with Mr. Charoensupaya out at front – together, they make a formidable team and were the obvious choice for the Opening of the Year Award with their terrific central Thai cooking featuring modern interpretations of traditional dishes.

The Michelin Service Award
The 2024 Michelin Service Award aims to highlight and encourage skilled and talented professionals who dramatically add to the customer experience. This year’s Michelin Guide Service Award, presented by Tourism Authority of Thailand, is given to Ms. Louise Bourgeois from Chef’s Table. Ms. Bourgeois, the manager at Chef’s Table, has always greeted guests with a warm, fervent welcome. Her charming approach and delightfully relaxed manner really stand out. She also exudes a great presence, leading the team with real style.

The Michelin Sommelier Award
The 2024 Michelin Sommelier Award recognizes the skills, knowledge, and passion of talented sommeliers of the industry. This year’s Sommelier Award is awarded to Mr. Thanakorn ‘Jay’ Bottorff from INDDEE. Mr. Bottorff presents a beautifully curated wine list of 600 selections – including nearly 60 wines by the glass, with a superb mix of the esoteric and the classic it makes a great read with even a few quizzes to test your knowledge! Novotel & ibis Styles Hamburg HafenCity, Germany will open in mid-2024 as part of the newly developed Überseequartier in Hamburg, which, as an integrated district and central part of Hamburg’s HafenCity, will include apartments, offices, an attractive cultural and leisure offer, innovative shopping and entertainment concepts, and finally a cruise terminal. At the grand unveiling, which took place this year at the Capella Bangkok, PRU, the signature community-to-fork dining venue at Trisara, the exclusive Phuket resort which is owned by Montara Hospitality, retained its MICHELIN red star. The restaurant, steered by Dutch chef Jimmy Ophorst, also held on to its MICHELIN Green Star, awarded for its strong commitment to sustainability.

PRU, which just premiered its new purpose-built venue, is the only MICHELIN red star restaurant in Phuket, a status it has held for six consecutive years.

There was good news too for JAMPA, which follows a philosophy of “locally-grown ingredients, live fire, and zero waste cuisine” at Tri Vananda, a US$182 million wellness community taking shape in the verdant forests of northern Phuket. The venue overseen by Rick Dingen retained its MICHELIN Green Star.

“It’s an absolute honour for PRU to achieve such recognition from MICHELIN,” said Ophorst. “It’s a tribute to everything that we have achieved as a team and also to our culinary philosophy. What we do at PRU is to create a unique dining experience by drawing inspiration from around Thailand. By discovering local ingredients and herbs that are not overly familiar, we can fuel our creativity.”

“The standards required to earn a MICHELIN green star are extremely stringent so it’s a massive achievement for us to retain the accolade,” said Dingen. “JAMPA innovates by using only live fire to transform local ingredients into amazing culinary creations with an emphasis on healthy and balanced food that is good for one’s body and soul.”

The accolades bestowed on the two venues are indicative of the standards PRU and JAMPA are setting for sustainable fine dining in Phuket.

PRU has blazed a trail for sustainable fine dining in Thailand. And its latest “Inside-Out” experience, housed in a new purpose-built restaurant, dissolves the traditional wall between the kitchen and the dining room.

With a theatre kitchen encouraging connections with guests, diners can see how each morsel is prepared, thereby providing complete transparency to the culinary process.

“We’ve come a long way to be where we are now,” added Ophorst. “But we want to look forward to attracting customers from around the world to Phuket with the objective of dining at PRU. Every chef wants to improve and push to the highest level possible and I’m no different. The creative scope that the new venue affords us means that the sky’s the limit.”

JAMPA, meanwhile, is a beacon for zero-waste, farm-to-table, live-fire cooking, manifesting what is sustainable culinary artistry.

“I aim to showcase locally sourced, seasonal ingredients in the best way possible,” says Dingen, whose hyper-local, plant-focused, cuisine is marking him out as a rising star in Thailand.

Palazzo Cordusio, A Gran Meliá hotel, is primely positioned in Piazza Cordusio, one of the city’s most iconic squares. The luxury hotel is housed within the historic Palazzo Venezia – jewel of the Assicurazioni Generali heritage and for over a century the company’s Milanese headquarters – and marks Gran Meliá’s Milanese debut, joining its Italian sister property in Rome, Villa Agrippina.

As the second Gran Meliá hotel, and fourth luxury property in Italy, the opening of Palazzo Cordusio further strengthens Meliá Hotels International’s presence in the destination as a key player in the luxury hospitality segment.

Timeless Design

Originally constructed between 1897 and 1901 by Generali, Palazzo Venezia’s eclectic design sought inspiration from the architect Luca Beltrami, and played a pivotal role in the restoration of the area between the late 19th and early 20th century. The reopening under the aegis of Meliá Hotels International (MHI) will be the driving force behind today’s redevelopment of Piazza Cordusio, which promises to hand back one of the city’s key cultural hubs to the Milanese people, symbolically connecting the Duomo with the Sforzesco Castle, whilst inviting international travellers to discover its storied past.

The recent renovation project was managed by Generali Real Estate and MHI with the support of Studio Marco Piva, who handled the design and the artistic direction of the external facades and of all portions subject to monumental restrictions, the interior architecture and courtyard. In an effort to consciously conserve as much of the building as possible, the grand staircase became the protagonist, and its marble walls and floors maintained and restored to their former splendour, as were the original portal with the Generali Assicurazioni heading and the mosaic lunette with the Providence allegory. These are precious evidence of the previous function of the building, whose aesthetics have been reported on all the portals of the historical scale and in those created from scratch to maintain stylistic coherence throughout the hotel. The renovated building is now part of Generali’s European real estate portfolio.

Following the transformation of the building’s internal spaces 84 rooms and suites have been created, each of which preserves protected elements, whilst elevating the areas for their new intended use. The luxury accommodations are characterised by imposing windows and in some cases private balconies which provide abundant natural lighting and unique views of Piazza Cordusio, via Orefici, via dei Mercanti and the Duomo.

Studio Asah by Alvaro and Adriana Sans, MHI’s long-standing partner, was entrusted with the interior design of the rooms and communal areas, favouring a sophisticated and contemporary style to provide the perfect base for a truly memorable stay in the heart of Milan. All rooms and suites, as well as some corridors, are embellished with Rubelli fabrics to pay homage to Generali’s Venetian roots, while soft furnishings include iconic pieces from some of Italy’s most emblematic brands such as Molteni, Cassina, Fornasetti, Flos, Oluce and Foscarini.

Delectable Fine Dining

  • SACHI: already well established in London, SACHI is set to take centre stage on the Milanese dining scene under the guidance of acclaimed Chef Moon Kyung Soo, whose impressive career includes leading award-winning concepts such as SUSHISAMBA Dubai and Attiko. The Japanese restaurant will offer an Omakase counter, a large dining area, and an expansive garden space overlooking the Duomo. Myrtle Beach used to be the place where four golf-deprived guy hackers headed for a week of 36 holes a day, fast food, and a fridge full of beer. Downtown “Myrtle” (as the locals call it) was an unpretentious mishmash of all-you-can-eat buffets, discount beach stores, mini-putts, and girlie joints – not exactly the vibe my friend Darlene and I were seeking on a recent gals’ golf getaway.

Women may be latecomers to the sport of kings, but we have high standards. A no-frills condo, a fridge full of beer, and a Big Mac for dinner are not for us. Along with remarkable golf, we want stylish digs, gourmet meals, theatre and maybe a martini or two.

I am happy to report that Myrtle has come a long way. The 96 km of South Carolina coastline, known as The Grand Strand, has grown up and expanded her charms. The areas north and south of “downtown” now offer fine dining, posh accommodations, and a remarkable variety of fantastic fairways.

No place on earth rivals the Myrtle Beach area for the sheer number of golf courses, quality, and affordability. Of the 80-plus award-winning courses, more than half have been ranked as outstanding, four-star or more in Golf Digest’s “Best Places to Play” guide. All of this healthy competition means that you won’t likely find a badly maintained or managed course amongst the lot.

But if you are having trouble choosing, here’s my “A” list, based on design, service, female-friendliness and variety.

Pine Lakes

Pine Lakes

Start your swinging spree at Pine Lakes. Known as the Granddaddy, it was Myrtle’s first course, opened in 1927. Originally known as Ocean Forest Country Club, the course survived the Great Depression and was renamed Pine Lakes in 1946, helping jump-start the area’s emergence into the game’s most popular destination.

Designed by Robert White, a native of St. Andrews, Scotland and the first president of the PGA of America, the par-70 plays in the shadow of the area’s beachfront skyline and tests golfers with an unforgettable collection of par-4s. In 2021 the course underwent an extensive green and bunker restoration.

Renowned southern hospitality lives on here as golfers are treated to complimentary mimosas in summer and seafood chowder in winter. The stately clubhouse, listed in National Registry of Historic Places, was the birthplace of Sports Illustrated magazine and the club is home to the Myrtle Beach Golf Hall of Fame. One could argue that Pine Lakes paved the way to Myrtle Beach being nicknamed ‘Golf Capital of the World.’

Resting high on bluffs overlooking saltwater marshes, the Intracoastal Waterway and Cherry Grove Inlet, Tidewater has earned its reputations as “the Pebble Beach of the East. Architect Ken Tomlinson named the par-5 first fairway ‘The Big Easy,’ and indeed it’s a gentle and wide handshake to the challenges ahead, especially on the back nine. Number 13 is a par-3 playing over a salt water marsh where wind factors into club selection. Number 16 rewards players at the green with a view of the Intercoastal Waterway.

Long Bay

Long Bay, a Jack Nicklaus Signature course, was next on our agenda. Known more for its sand than water, the course has more than 150 bunkers to be avoided. Most memorable are the 10th with fairway and green flanked by an enormous waste bunker and the 13th with its postage-stamp island green. The staff went out of its way to welcome us at Long Bay.

At the highly acclaimed Caledonia Golf & Fish Club an impressive avenue of live oaks laden with Spanish moss leads to the antebellum-style clubhouse. Mike Strantz’s brilliant design winds gracefully through what was a historic rice plantation. Pull up a rocking chair on the verandah and sip a mint julep after your round.

At True Blue Plantation, another masterpiece by architect Mike Strantz, everything is big and bold. Greens erupt out of sand barrens, fairways are 60 to 90 yards wide and holes take on the form of gigantic caterpillars.

Barefoot Resort & Golf

In North Myrtle, Barefoot Resort & Golf tempts with four 18-hole tracts by Pete Dye, Tom Fazio, Davis Love III and Greg Norman. Golf Digest ranked the latter, at 7,200 yards with seven holes along the Intracoastal Waterway, in the top 50 courses of Myrtle Beach.

At Willbrook Plantation in the Litchfield area, designer Dan Maples has carved a gentle tract out of two former plantations that has received numerous accolades from women’s golf magazines.

A Nicklaus Signature course, Pawleys Plantation is a classic Low Country design that aptly demonstrates the designer’s philosophy that “golf is a game of precision as well as power.”

Meanwhile, for a post-round repast, the sheer number and variety of eateries in Myrtle Beach is mind-boggling. The portions served in most establishments are so generous that two adults can happily split a main course, order an extra soup or salad and still not be able to clean their plates.

Our favourite, the Hook & Barrel, always has a waiting list, so best make a reservation. Founder and chef Heidi Vukov’s menu is partial to seafood. From the Steam Galley, Heidi’s version of oysters on the half shell come with bacon, spinach, onions, and mascarpone with a Sambuca/tarragon sauce. Catch of the day might be pan-seared Carolina trout. If you’re more of a carnivore, try the espresso-rubbed New York strip. Be sure to leave room for Key Lime pie or maple bourbon crème brûlée.

Next door to the Hook & Barrel, Croissants, also run by Heidi and her team, offers a fantastic selection of breakfast items. The flaky/buttery croissants taste like they came right out of a Parisienne boulangerie.

At Greg Norman’s Australian Grille in Barefoot Landing, sink your teeth into tender prime rib washed down with a glass of the Shark’s own Shiraz. The wine list is vast and the décor is upscale without being stuffy.

Bovine’s in Murrells Inlet serves up succulent bourbon roasted ribs and that Southern staple, shrimps and grits. But if Bovine’s is full, no worries, this inlet is chock-full of casual eateries.

Situated just behind the dunes and overlooking the Atlantic Ocean, the historic Sea Captain’s House has won awards for its she-crab soup, a rich bisque with a dash of sherry.

Après golf diversions

Take a stroll through the lovely Brookgreen Gardens showcasing more than 2,000 works by American sculptors on the site of four former rice plantations, now a series of themed botanical gardens.

Okay, it’s not Mozart or Shakespeare, but Myrtle’s got plenty of theatre venues. Kenny Rogers and Billy Ray Cyrus are among the entertainers who have graced the stage of the plush 2,000-seat Alabama Theater. At the Carolina Opry, bluegrass, cowboy ballads, gospel, and hurtin’ songs come with about a zillion costume and set changes.

Where to stay

Headquarters for Darlene and I was a spacious two-bedroom suite at the Marina Inn at Grand Dunes, complete with kitchen, dining and living rooms, fireplace and balcony overlooking the Intercoastal Waterway. Amenities included an outdoor infinity pool and indoor pool and fitness centre. Next door was Ruth’s Chris steakhouse where we enjoyed happy hour at the bar with a couple of dry martinis and lamb lollipops on our first night.

The 45-year-old led his team to a 16.5 – 11.5 win in Rome in October to wrestle back the title from the US. He will now become Europe’s first repeat captain since Bernard Gallacher manned the helm in three consecutive tournaments between 1991 and 1995.

Donald set his sights on building a legacy as his retention was announced.

“The Ryder Cup experience for me in 2023 was an amazing one,” Donald said. “I really enjoyed the whole journey. To be only the second European Ryder Cup captain to possibly go back-to-back is something that’s very interesting to me and a great challenge and excites me. I love what the Ryder Cup represents. I’ve had so many amazing experiences as a Ryder Cup player and obviously as a captain, and to be given the honour to go back-to-back is very special for me.”

Donald’s retention as Team Europe captain reflects the esteem in which he is held in the wider golf community. And his rising stock is indicative of the caliber of courses in Central Vietnam which has an array of world-class golf layouts designed by some of the biggest names in the game.
