Chiang Mai Hotel’s Organic Farming Initiative Burgeons with New Partnership - TRAVELINDEX.comMeliá Chiang Mai has joined forces with a new sustainable and chemical-free farm to source the likes of rare, local greens, cage-free eggs and sterilised fresh milk, expanding its ‘360° Cuisine’ program.

In a bid to work closely with local farmers to help them improve sustainability and encourage ethical production to ultimately make the overall food system more resilient, the hotel has formed a partnership with organic gourmet farm Rong Khum in San Pa Tong.

The hotel sources organic Jasmine rice, cage-free eggs, fresh organic milk free of added hormones, vegetables such as betel leaves, coriander, spring onion, star gooseberry and chili, and fruits including longan, lychee, papaya, dragon fruit and bananas from Rong Khum for guests’ meals at Mai Restaurant & Bar, Laan Na Kitchen, MAI The Sky Bar and Ruen Kaew Lounge.

Chiang Mai University Professor Dr. Puangrat Kaewlom, who comes from a long line of farmers and is passionate about research into sustainable agriculture, established Rong Khum about two years ago. The farm joins the hotel’s network of ethical and chemical-free suppliers including gourmet farm SEED in San Sai District and Jartisann’s Original Thai Cheese, which crafts artisanal cheese made from high-quality, locally sourced raw cow’s milk.

The network is a central plank in Meliá Chiang Mai’s ‘360° Cuisine’ program, designed to reduce the hotel’s carbon footprint and promote healthy eating. Under the program, the hotel sources ‘farm to plate’ organic produce that travels only a short distance. As much of each ingredient is used – roots, leaves, stems, stalks and more – in a ‘thoughtful cooking process’ before ‘plate to farm’ food waste returns to the farms as fertilizer in a truly 360° concept. Leftover cooking oil is sent to be recycled into biodiesel.

Since the 360° Cuisine program’s inception in 2022, the hotel has sent more than 3300kg of leftover food for compost and fertilizer to both farms and more than 660kg of cooking oil to a biodiesel producer.

“It’s no easy feat to operate a chemical-free farm and it’s more expensive to support sustainable agriculture,” said Meliá Chiang Mai’s executive chef Suksant (Billy) Chutinthratip. “Yet we believe it’s crucial to engage directly with local farmers, producers, professors and health sector professionals to create a unique connection within the community that ultimately benefits the health of our guests, our community and our environment.”

Meliá Chiang Mai also ushers guests onto SEED and Rong Khum to meet local farmers and learn more about sustainable farming and healthier eating, as part of its Journey to the Farm Package.

The hotel was recently awarded the “Chiang Mai Green Kitchen” certificate for a second year and the new “Sustainable Healthy Food Program” certificate from Thai Health Promotion Foundation and Chiang Mai University in recognition of its efforts to go above and beyond to implement sustainable practices in its kitchens and contribute to healthy food practices in Chiang Mai. The Tourism Authority of Thailand has also certified the hotel with a “Five-Star Sustainable Tourism Acceleration Rating”.

Beautiful Etosha-stone-walled outside showers have also been added, offering the perfect mix of privacy and a dash of daring.   Inside the tents, the suites all have new furniture and softs.  Each tent has a Nespresso coffee station and SMEG bar fridge and kettle for easy access to refreshments, including complimentary decanters of whiskey, cognac and gin.  The main guest areas have also enjoyed a refresh and are looking warm and inviting.

General Manager, Marelize Conradie commented “Tented Camp is looking fresh and rejuvenated following an extensive refurbishment.  We kept the feel of it very similar as we know it is a firm favourite for many – but we have added new and enhanced some of the facilities for maximum comfort under canvas. The Bespoke Temple Dinner offers a once-in-a-lifetime dining experience, uniquely set within the ancient temple complex of Angkor, a place of legend, myth and deep spirituality. The scene is set with blazing torches that cast flickering shadows around the ancient relics of the Khmer Empire. The specially designed meal is inspired by the hotel’s original 1936 menu first served in this historic setting, and the evening’s entertainment includes a performance of traditional Cambodian Apsara dance against a backdrop of the mystical temples.

Lost Civilisations of Angkor by Vespa features an off-the-beaten-track chauffeured ride on the back of a motorbike through the Angkor Archeological Park. The adventure explores areas not easily reached by foot, or too narrow or overgrown with forest to access by car, to appreciate the splendour of the centuries-old edifices. The journey begins at dawn to watch the sunrise at Angkor Wat, followed by a Raffles breakfast picnic at the edge of the temple complex. Highlights of the tour include Angkor Wat, Ta Prohm, Bayon, Angkor Thom and other lesser-known architecture marvels.

In Meet the Elephants of Angkor, guests travel to the idyllic foothills of Kulen National Park, home to a local sanctuary for the last remaining elephants of Angkor. This immersive, educational outing into the wilderness includes hands-on experiences with the majestic creatures. After the encounter, guests are served a picnic in the jungle curated by chefs at Raffles Grand Hotel d’Angkor. The cost of the experience is donated to the elephant sanctuary for the conservation and protection of the area’s community forest and endangered wildlife.

Khmer Culinary Discovery involves a nighttime tour of Siem Reap’s best-loved restaurants. The excursion, curated by local culinary expert Evi-Elli, includes a welcome drink, art gallery tour, three-course meal at three destinations, transportation by ‘tuk tuk’ (a traditional rickshaw) and a souvenir to bring home.

The Siem Reap Art Tour offers an insider’s look into the talented community of artists and ateliers in Siem Reap. The outing is guided by Robina Hanley, the curator of the popular Siem Reap Art Tour, who has been working with local artisans for more than two decades.

Reflections of Angkor presents a one-of-a-kind opportunity to enhance one’s photography skills while discovering hidden gems at the UNESCO World Heritage Site of Angkor. Veteran photographer and curator Régis Binard leads this unique cultural exploration that will leave guests with heightened photography skills that will remain with them for years to come.

In addition to the Curated Journeys, the new onsite Raffles Resort program features seven memorable experiences within the resort grounds. These include ‘The Untold Stories’, an encounter with the hotel’s resident historian, Mr. Mouth Saravann, to uncover the vestiges of the past through a history tour of the hotel. ‘Sommelier Sessions’ include an intimate class with the hotel’s resident sommelier, Ms. Eat Socheata, who shares insights into terroirs, seasons and grape varietals in a sensory journey of the magnificent world of wine.

‘The Art of Lotus Folding’ delves into the secrets of hand-folding delicate lotus leaves and outer petals into charming decorative blossoms. ‘Legendary Libations’ is a masterclass on the iconic Raffles cocktail, the Singapore Sling, first served at Raffles Hotel Singapore in 1915, and its newer (more local) iteration, the Angkor Sling. The ‘Royal Residence Tour’ is hosted by the hotel’s Resident Curator, Mr. Pat Sambo, who introduces some of the renowned Angkorian leaders who shaped modern Cambodia.

‘Rise with the Sun’ is a mindful Yoga Asana session at dawn designed to release tension and revitalise the body and soul. In ‘Spiritual Awakening’, guests receive a monk’s blessing with fragrant jasmine water and special chants. The ceremony is performed under a pagoda bell that was unearthed after the war and gifted to the hotel as a sign of peace.

The founder of the property opened the country’s first art gallery over sixty years ago. Moving past the sculptures and paintings it’s known for, the resort is embracing another kind of creativity – culinary arts, with events that showcase talented local entrepreneurs and bring people together.

Inspired by International Women’s Day, the March 16th event ‘Bird Lounge Beats & Oriental Treats’ is a collaboration between craft cocktail bar Moonsipper Club, Tanah Gajah, and artisan noodle shop Kedai Hou Ah, all of which are run by women. Tanah Gajah’s general manager Deasy Swandarini was born and raised on the island. Even Chef Dean, behind The Tempayan restaurant at Tanah Gajah, will be serving up dishes passed down from his mother for the one night event.

Running from 5-8pm the sunset Soirée will include oriental-inspired cocktails from Sherrine Budiman’s hip cocktail bar, noodle dishes by the friends Nydia Orlatta and Regina Nalasetya behind Kedai Hou Ah, and dishes highlighting Chef Dean’s Singaporean roots. There will be live music and the resort’s Bird Lounge, a creative gathering space near The Tempayan, will be transformed with cultural ornaments and the addition of picnic-style seating allowing guests to spread out and enjoy the surrounding green space. Guests who arrive early will have the chance to win a one-of-a-kind hot air balloon ride.

Sherrine’s business acumen combined with her innovative spirit have led her to create several successful ventures including a boutique hotel, Flock restaurant in Ubud, and a daycare center. Tempakultura, a creative haven in Bali advocating for various causes (including animal welfare and women empowerment) was launched during the pandemic. Moon Sipper Club, inspired by a love of mixology that blossomed during her time in Canada, is one of her more recent endeavors but she didn’t stop there. In recent weeks she launched a hip cafe and taproom called Old Pals, with a lifelong friend.

Kedai Hou Ah was also born out of friendship and a craving to recreate the noodle dishes Nydia and Regina shared with their family in Jakarta.

“In many households, recipes are heirlooms that are well-kept and passed down through generations,” explained the duo. “We embrace our culture through food, take our time to understand it, and share what we have learned.”

Following on from the March experience, the next Sensory Soirée ‘Sunny Bites & Cool Delights,’ will take place in June. It will be a summer gastronomy festival highlighting unique local brands, wine, spirits, and locally sourced produce.

For Indonesia’s Independence Day on August 17th Tanah Gajah will host ‘Threads of Tradition and Tea Tastings,’ that will introduce traditional tenun fabric from Gianyar and artisan jewelry. A selection of teas and afternoon tea treats that showcase the country’s heritage will also be on offer.
