Van Heemsbergen embarked on his path as a professional chef almost 30 years ago when he completed a traineeship at t’Fornius, a Michelin-starred venue in the Belgian city of Antwerp that is rated as one of the country’s finest restaurants. And he has not looked back since those early years — setting out on a culinary odyssey as a chef that has taken him to glamorous locations around the world.

Notable assignments along the way include stints at Michelin-starred restaurants like Lasserre in Paris and the legendary La Pyramide in Vienne, France. Previous hotel experience, meanwhile, includes periods at properties like Dubai’s Burj Al Arab, Raffles Singapore, The Peninsula in Manila, and Four Seasons Safari Lodge Serengeti in Tanzania. Most recently he worked at Marineau, one of the best seafood restaurants in Antwerp.

Now he is applying his culinary expertise to the new role overseeing the Food and Beverage offerings at Hyatt Regency Phnom Penh. The property has earned widespread acclaim since opening in January 2021. Most recently, it was ranked “top city hotel” in Cambodia at Asia’s Best Awards 2022 by leading travel publication Travel & Leisure Southeast Asia.

Hyatt Regency Phnom Penh Nurtures Next Generation of Hospitality Stars

PHNOM PENH, Cambodia (Aug. 30, 2022) – Hyatt Regency Phnom Penh is nurturing the next generation of Khmer hospitality personnel via a new collaboration with Cambodia’s National Institute of Entrepreneurship and Innovation (NIEI).

The property, the newest international branded luxury hotel in Cambodia’s capital, today signed a memorandum of understanding (MOU) with the NIEI. Through the agreement, which will span the next two years, the hotel will provide resources, workshops, training, technical and curriculum consultation to NIEI in order to develop candidates. It will also offer internships to NIEI students to help build their skills in key areas of hospitality.

“One of Cambodia’s most potent attributes is the natural hospitality of its people,” said Juan Mercadante, the general manager of Hyatt Regency Phnom Penh. “By refining skills through internships at our hotel, we can really maximize this human capital and offer these students invaluable experience and opportunities to grow their careers.”

The new arrangement between Hyatt Regency Phnom Penh and the NIEI is in line with the Hyatt RiseHY initiative. RiseHY is a new global program designed to pair the hospitality industry’s career opportunities with young people who need them. As part of the initiative, Hyatt hotels around the world will commit to hiring 10,000 Opportunity Youth – people ages 16 to 24 who are neither in school nor working – by 2025.

According to the International Labour Organization, more than 40 percent of the world’s young people are either unemployed or living in poverty.

“We understand the challenges young people face, and Hyatt hotels are uniquely positioned to be part of the solution. Hospitality is one of the few industries where entry-level opportunities often lead to fulfilling, life-long careers that can change the trajectory of someone’s life,” said Malaika Myers, chief human resources officer, Hyatt. “With the launch of RiseHY, Hyatt hotels will harness the power of technology in ways our industry has never done before, to scale career opportunities, bringing awareness to hospitality careers and setting up candidates for success from the start as it expands training programs as a path for employment.”

I’m excited to share my knowledge and contribute to the hotel’s continued success,” he said.

He has overseen a succession of projects with Hyatt including rebranding, deflagging, and pre-opening properties. “In my tenure with Hyatt, I’ve had the privilege of working in five different continents, he said. “Each role has been a unique experience that has contributed to my knowledge and skills to become a better leader.”

Over the decades, he rose through the room and management ranks at Hyatt Regency Cancun Mexico, Hyatt Regency Almaty Kazakhstan, Hyatt Regency London -The Churchill and Hyatt Regency Dubai, and Galleria Residence. In 2012, he returned to his hometown to join Hyatt Regency Mexico City as a hotel manager before advancing as a pre-opening general manager at Grand Hyatt Playa Del Carmen Resort, which was the first Grand Hyatt brand in Mexico. Most recently he was selected as pre-opening general manager at the first Andaz brand in South Korea.

With shifts at high-profile city and resort hotels around the world in his background, Mercadante can draw upon extensive experience in the global tourism industry. Cambodia Set to Open for Tourism in November - TRAVELINDEXPhnom Penh, Cambodia, September 8, 2021 / TRAVELINDEX / With Phnom Penh on track to become the most vaccinated city in Southeast Asia, moves are afoot within Cambodia’s tourism industry to work towards a possible reopening of borders for fully vaccinated international travelers by November this year.  Hyatt Regency Phnom Penh readies to welcome vaccinated visitors in Q4 2021

The Cambodian tourism ministry recently announced that fully vaccinated international tourists with proof of their inoculation could be allowed into Cambodia as soon as November 2021. To make travel more convenient, Cambodia is also considering lessening or the full removal of the 14-day quarantine policy for fully vaccinated tourists, barring certification showing a negative COVID test 72-hours before travel and another negative COVID test upon arrival at Phnom Penh International Airport.

Cambodia is currently the second most vaccinated country in Southeast Asia after Singapore: the Kingdom has already inoculated over 60% of its 16.5 million people, while over 95% of its residents in the capital Phnom Penh (2.1 million) are already fully vaccinated. The country anticipates it will reach herd immunity with 75 percent of its population double vaccinated by the end of September this year. The Cambodian government has also recently started vaccinating children over the age of 12 starting in August.

In April 2020, Cambodia closed its borders to tourists in a bid to control the spread of COVID-19. Last year, the country recorded zero deaths and less than 400 cases, mostly imported and caught at the border. However, in February this year coronavirus started spreading countrywide, triggering a strict two-month nationwide lockdown. Cambodia emerged from lockdown in June and efforts have been underway since to vaccinate the population through the country’s mass inoculation efforts.

“We’ve been very fortunate in Cambodia to have access to vaccines and I’m pleased to report that 99 percent of our hotel staff are already double vaccinated,” said Herman Kemp, general manager of Hyatt Regency Phnom Penh, which opened in the Cambodian capital in January. “That together with our stringent hygiene measures, makes me confident that we will be prepared for international visitors once travel resumes.”

Kemp added that Cambodia’s successful reopening will be dependent on a fast inoculation rollout and consumer confidence. “If Cambodia continues on the current vaccination trajectory, we will most likely become the first country in Southeast Asia to open to tourists,” he said. “When that happens, I’m looking forward to welcoming international guests to our beautiful property and showing them all that this amazing city has to offer.”

One quick scroll through the Instagram hashtag of #HyattRegencyPhnomPenh, which opened in the Cambodian capital in January, brings up plenty of iconic snaps of the hotel’s stunningly revamped Colonial House entrance. Originally built as a secret villa for a princess in the early 20th century, the lemon-colored French heritage building with its wooden shutters, arched doorways, and terracotta-tiled roof has quickly become the property’s go-to selfie spot, thanks to a recent fashion shoot by SOVRIN Magazine, Cambodia’s top fashion glossy. The shoot features well-known Cambodian actress and model, San Kosamak, posing in a trenchcoat on the steps of the Colonial House, spawning a number of copycat photos on Instagram.
