Storied Collaboration: Anantara Chiang Mai and Legendary Michelin-Plated Jia Tong Heng

Storied Collaboration: Anantara Chiang Mai and Legendary Michelin-Plated Jia Tong HengThis season, Anantara Chiang Mai Resort invites guests on a journey through taste, time, and tradition with the launch of Whispers of the East — a one-of-a-kind afternoon tea collaboration between Executive Chef Natruthai Petsuwan and third-generation Chef Pongsakorn Jiarasatit of the Michelin-Plated Jia Tong Heng. The experience is available daily from 1 June to 31 October 2025, between 2:00 pm and 5:00 pm, at The Verandah at 1921 House.

Framed by the shaded verandah of the former British Consulate and overlooking the serene Mae Ping River, afternoon tea at Anantara Chiang Mai has long been a signature ritual. Each season introduces a new interpretation of the classic British tradition — infused with tropical flavours, local inspirations, and now, a refined Teochew twist.

This summer’s Whispers of the East pays homage to Chiang Mai’s Chinese culinary legacy. Chef Pongsakorn of Jia Tong Heng — one of the city’s most iconic and beloved Chinese restaurants — joins forces with Chef Natruthai to reinterpret treasured family recipes into a curated tea-time indulgence.

As one of Chiang Mai’s oldest and most beloved Chinese restaurants, the Michelin-Plated Jia Tong Heng is a name synonymous with celebration. From its early days in Nawarat Market to its flagship Si Don Chai restaurant and new-generation offshoots in Fa Ham, Nimman, and Mae Rim, the restaurant has been at the heart of Chiang Mai’s community dining for nearly 70 years — a symbol of family feasts, festive banquets, and cross-generational celebration.

Now, in a first-of-its-kind collaboration, the family’s beloved recipes are transformed into an elegant afternoon tea format with a modern Teochew twist. Guests can expect dim sum–style savouries like steamed buns filled with slow-cooked Moo Hong pork, alongside time-honoured sweets including ow nee pae kuay cake made from Chef Pongsakorn’s grandmother’s original recipe, and a striking Chinese red date Mont Blanc. Traditional scones are served with clotted cream and preserves, alongside house-made tropical gelato and sorbet — a cooling signature of the resort’s afternoon tea experience.

Served on vintage blue-and-white porcelain reserved for special occasions, each bite is thoughtfully paired with fine teas and coffees. Beverage selections include sustainably sourced blends from TWG and local Chiang Mai roaster Monsoon Tea, with favourites such as Tha Pae Gate and Mountain Breeze Oolong.

“Anantara takes great pride in celebrating each destination’s cultural richness, especially through cuisine,” says Executive Chef Natruthai Petsuwan. “Jia Tong Heng is just down the road, and it’s an honour to collaborate with such a local institution to craft something truly meaningful.”

“As a proud ambassador of Sino-Thai cuisine, it’s a privilege to reinterpret my ancestors’ recipes for Anantara’s guests,” adds Chef Pongsakorn Jiarasatit. “It’s a collaboration close to the heart — and hopefully the first of many.”

Anantara Chiang Mai Resort’s Afternoon Tea experience is served daily from 2:00 pm to 5:00 pm at The Verandah at 1921 House, priced at THB 1,188++ per person | THB 2,188++ per couple (Consul’s Set), and THB 1,288++ per person | THB 2,388++ per couple (Governor’s Set with signature cocktail or mocktail).

Michelin-Starred Caviar Experience at Mezzaluna

900 635 wttc2
Michelin-Starred Caviar Experience at Mezzaluna - TRAVELINDEX

Michelin-Starred Caviar Experience at Mezzaluna - TRAVELINDEXBangkok, Thailand, June 11, 2025 / TRAVELINDEX / In a bold redefinition of fine dining, Mezzaluna by lebua, Bangkok’s two-Michelin-starred culinary destination, announces a one-night-only collaboration with Caviar House & Prunier, the global authority in luxury caviar. This exclusive event invites guests to dive into the rare gastronomic experience: This five-course menu highlights five distinct caviars, with select dishes complemented by Champagnes from Bollinger, one of the world’s most prestigious Maisons de Champagne.

Unlike traditional fine dining where caviar appears only once or twice, here it takes the spotlight — featured in every course. Each dish is designed to showcase the character of its caviar, with Champagne selected to highlight its complexity. From the delicate notes of the sea to the deep umami of Murakami Wagyu, this dinner promises a carefully choreographed journey of flavor, balance, and discovery.

But the journey begins even before the first course…

Welcome Canapés

Samurai Gold Oyster, Shio Koji Cream, Kombu Oil
Sweet Corn Velouté, Onsen Quail Egg
Zuwai Crab Beignet, Mornay Sauce

Caviar: Français Oscietra
This creamy, nutty Oscietra caviar sets the tone for the evening with a refined prelude to the courses ahead.

Course I – A Dance of Lightness and Depth

Somen Noodle | Squid, Tomato Dashi, Shiso
Caviar: Oscietra Superieur
Champagne: Bollinger Special Cuvée, Brut NV

The bright tomato broth and soft noodles balance the rich Oscietra, while the Champagne’s notes of orchard fruit and brioche enhance its depth.

Course II – From Ocean Depths to Delicate Peaks

Seared Sanriku Scallop | Cauliflower, Bafun Uni Bisque
Caviar: Saint-James
Champagne: Bollinger PN TX17, Brut NV

A delicate caviar meets buttery scallop and creamy uni, sharpened by the minerality and citrus of this rare Blanc de Noirs Champagne.

Course III – Where Land Meets Sea

Kombu Steamed Madai | Sea Bream, Crab, Potato, Caviar Sauce
Caviar: Prunier

A nod to classic French luxury, Prunier caviar’s bold umami and ocean salinity complement the natural sweetness of sea bream and crab — no Champagne, just pure caviar expression. It’s a dish that allows the Prunier’s heritage to shine uninterrupted.

Course IV – Rich, Refined, and Reimagined

Charcoal Grilled Murakami Wagyu | Tiger Prawn, Asparagus, Hollandaise Sauce
Caviar: Français Oscietra (Reinterpreted)
Champagne: Bollinger La Grande Année, Brut 2014

This course layers surf and turf with creamy sauce and elegant caviar. The vintage Champagne adds complexity, citrus, and a touch of toasted elegance.

Course V – The Finale

Dark Chocolate Sam Phrao 75% | Kuromame, Citrus
Caviar: Tradition

A surprising and indulgent finale, blending Thai single-origin chocolate, bright citrus, and a final touch of caviar — closing the meal with balance and creativity.

Chef Ryuki Kawasaki shares “Each dish in this menu was built around the caviar — not just as a garnish, but as the centerpiece. My goal was to let every type of caviar shine in its own way, with ingredients and textures that enhance its character”

Hosted 65 floors above the city at Mezzaluna’s open kitchen, this intimate evening is limited to a select number of guests — a once-in-a-lifetime experience where caviar takes center stage in every sense.

Date: June 18, 2025
Time: 5:30 PM – 9:30 PM
5-Course Tasting Menu: THB 10,000++
3-Glass Champagne Pairing: THB 4,900++
